  • Occasion : Holiday food
  • Cooking : Grilled / Roasted
  • Servings : 2 servings
  • Difficulty : Beginner

Ingredients

  • 1 Frozen or Leftover Mung Bean Pancake
  • 50g Tomato Sauce (or Pasta Sauce)
  • 100g Pizza Cheese (Mozzarella or Shredded Cheese)
  • 4 Strips Bacon (optional)
  • 15 Slices Pepperoni (optional)
  • 3 Olives (sliced or whole)
  • 10g Honey Mustard Sauce (optional, or Mayonnaise)

Cooking Instructions

Step 1

Take out a frozen mung bean pancake or any leftover mung bean pancakes from your Chuseok feast. If frozen, thaw it gently in the microwave or at room temperature until pliable. Spread about 1 tablespoon (1T) of tomato sauce onto the mung bean pancake.

Step 1

Step 2

Using the back of a spoon or a spatula, evenly spread the tomato sauce across the surface of the mung bean pancake. Make sure to cover it all the way to the edges for consistent flavor in every bite.

Step 2

Step 3

Generously sprinkle pizza cheese over the tomato sauce-covered pancake. Aim to cover at least 80% of the surface for a delicious, cheesy finish.

Step 3

Step 4

Arrange the sliced olives decoratively on top of the cheese. I added a drizzle of honey mustard sauce for a touch of sweetness, but feel free to use regular mustard or mayonnaise according to your preference. Mayonnaise is a great option if you’re making this for children.

Step 4

Step 5

Cook the bacon strips in a pan until golden brown and crispy. Once cooked, cut them into bite-sized pieces (about 1-2 cm) and scatter them evenly over the pizza. The savory bacon adds a wonderful depth of flavor.

Step 5

Step 6

Alternatively, instead of bacon, you can use pepperoni slices. Arrange 15 slices of pepperoni artfully over the cheese. The slightly spicy and salty pepperoni complements the pizza beautifully.

Step 6

Step 7

Carefully place the assembled mung bean pancake pizza onto the middle rack of a preheated oven set at 200°C (390°F). If you don’t have an oven, you can cook it in a skillet over low heat with a lid until the cheese is melted and bubbly.

Step 7

Step 8

Bake in the 200°C (390°F) oven for approximately 10 minutes. The cooking time may vary depending on your oven’s performance and the thickness of the pancake. Bake until the cheese is melted and golden brown, and the edges of the pancake are slightly crisp. Keep an eye on it to prevent burning and adjust the time as needed.

Step 8

Step 9

Voila! Your delicious and simple mung bean pancake pizza is ready straight from the oven. Enjoy this creative and satisfying meal or snack made from your leftover holiday jeon!
