Pork and Aged Kimchi Stew Ingredients

  • 1 bowl of well-fermented aged kimchi (approx. 600g)
  • 400g pork shoulder or leg meat
  • 1/4 onion
  • 2/3 stalk green onion
  • 1 Tbsp minced garlic
  • Pinch of ginger powder (optional)
  • 2 Tbsp cooking wine (mirin or sake)
  • 1 Tbsp sugar (to balance the kimchi’s acidity)
  • 3 cups anchovy broth (or rice water)

Cooking Instructions

Step 1

Prepare the pork shoulder or leg meat by cutting it into bite-sized pieces. Slice the onion into thick strips and the green onion diagonally. Having your ingredients prepped makes the cooking process much smoother.

Heat a pan over medium-high heat and add the pork. Stir-fry until the pork begins to turn white. Add the cooking wine and a pinch of ginger powder to eliminate any gamey odors and enhance the flavor. Stir continuously to prevent the pork from burning.

Once the pork has turned white, add the prepared aged kimchi to the pan. Stir-fry together with the pork, adding 1 tablespoon of sugar to mellow the kimchi’s sourness and add a touch of sweetness. Sauté until the kimchi and pork are well combined.

Pour in 3 cups of anchovy broth and bring to a rolling boil over high heat. Once boiling, reduce the heat to medium-low and let it simmer gently. During the simmering process, add the sliced onion and 1 tablespoon of minced garlic. Continue to simmer for about 20 to 30 minutes, allowing the flavors to meld and the ingredients to become tender. The longer it simmers, the deeper and richer the flavor will become.

In the final step, once the ingredients are cooked through and the broth has reduced slightly, add the diagonally sliced green onion and simmer for another minute or two. The fresh aroma of the green onion will add a lovely finishing touch to the dish.
