Main Ingredients- 2 Eggs
- 120g Spam (1/2 can)
- 1/2 block Tofu (approx. 150g)
- A pinch of Scallion (white parts preferred)
- A pinch of Carrot
- A pinch of Zucchini
Seasoning & Others- Pinch of Salt
- Pinch of Pepper
- Pinch of Salt
- Pinch of Pepper
Cooking Instructions
Step 1
Lightly rinse the half block of tofu under running cold water. Place it in a sieve and press down firmly with your palm to remove as much moisture as possible. Transfer the drained tofu to a bowl. This step helps achieve a chewier texture for the fritters. (Tip: Using paper towels or a clean cloth can help remove moisture more effectively.)
Step 2
To keep things tidy during cooking, place the Spam in a disposable plastic bag. Inside the bag, use your hands to mash the Spam into small pieces. This makes mixing the ingredients easier and prevents them from clumping together.
Step 3
Add the mashed Spam to the bowl containing the drained tofu.
Step 4
Finely dice the zucchini, carrot, and scallion after washing them thoroughly. Adding finely chopped vegetables enhances the visual appeal and adds a delightful texture to the fritters. Using the white parts of the scallions can add a pleasant aroma. Add about 3 tablespoons of the chopped vegetables to the bowl with the Spam and tofu.
Step 5
Crack 2 eggs into the bowl. Sprinkle in a pinch of salt and pepper. Be mindful not to add too much salt, as Spam is already salty. The pepper adds depth to the flavor.
Step 6
Using a spatula or spoon, gently mix all the ingredients in the bowl until well combined. Avoid overmixing; the goal is to evenly distribute the ingredients without making the mixture dense.
Step 7
Heat a frying pan over medium heat and add a generous amount of cooking oil. Scoop about one tablespoon of the mixture at a time and carefully place it into the hot pan, forming small, round fritters. (Tip: Making them too large can lead to longer cooking times and difficulty flipping. Small, bite-sized fritters are recommended.)
Step 8
Cook each side until golden brown and crispy, then flip. Fry for about 2-3 minutes per side, for a total of 4-6 minutes, ensuring the inside is cooked through and the outside is perfectly crisp. These delicious Spam and Tofu Fritters are best enjoyed hot off the pan.
