Rösti & Topping Ingredients

  • 2 medium potatoes (approx. 300g)
  • 2 eggs
  • 3-4 strips thick-cut bacon
  • 2 slices cheddar cheese
  • 50g mozzarella or shredded cheese blend
  • Pinch of salt
  • Pinch of black pepper
  • Generous amount of cooking oil (or butter)

Cooking Instructions

Peel the potatoes and then julienne them into thin strips, about 2-3mm thick. (Using a grater can make this process easier.) Rinse the shredded potatoes in cold water for about 5-10 minutes to remove excess starch. Drain them thoroughly in a colander, pressing out as much water as possible. Ensuring the potatoes are dry is crucial to prevent oil splattering and achieve a crispier pancake.

Prepare the ingredients that will enhance your Rösti. Cut the bacon into 1-2 cm pieces. Have your cheddar cheese sliced or portioned, and your shredded cheese ready. The eggs will be used for fried eggs later. (Feel free to adjust or add other ingredients to your preference.)

Heat a generous amount of cooking oil in a large skillet over medium heat. Spread the drained, shredded potatoes evenly in the skillet, pressing them down gently to form a round shape, about 15-20 cm in diameter. Sprinkle lightly with salt and pepper. Cook for about 5-7 minutes per side until the surface is golden brown and crispy. It’s important to maintain medium heat to ensure the inside cooks through without burning the outside.

As the Rösti is nearing completion, fry the eggs in another pan or on the side of the same pan. Aim for a sunny-side-up style with a runny yolk; this adds a wonderful creamy texture when enjoyed with the Rösti.

Cook the bacon strips in a separate pan until they are golden brown and crispy. To reduce greasiness, you can gently dab the cooked bacon with a paper towel to absorb excess fat. (Place the cooked bacon on paper towels to drain.)

Once the potato pancake (Rösti) is well-cooked, place a slice of cheddar cheese on top, followed by a generous sprinkle of shredded cheese. Cover the pan or use foil to trap heat and melt the cheese completely over low heat for about 2-3 minutes. Once the cheese is melted, carefully transfer the Rösti to a plate. Top with the prepared sunny-side-up egg and the crispy bacon. Serve immediately while warm for an incredibly satisfying crispy-tender experience!
