  • 1 stalk Green part of scallion
  • Sesame oil
  • A little cooking oil

Sauce Ingredients

  • 1 Tbsp Soy sauce
  • 1 Tbsp Plum extract (maesilcheong)
  • 1 Tbsp Cooking wine (mirin)
  • 0.5 Tbsp Fish sauce (anchovy)
  • 0.5 Tbsp Minced garlic
  • 0.5 Tbsp Sesame oil
  • A pinch of sesame seeds

Cooking Instructions

Step 1

Prepare all the ingredients needed for this delightful Enoki Mushroom Skewer recipe. Having the ingredients measured out as per the recipe will make the cooking process smoother.

Step 1

Step 2

Keeping the enoki mushrooms in their plastic packaging, carefully slice off the bottom root part with a knife. This helps maintain the mushroom’s shape and makes them easier to handle.

Step 2

Step 3

Turn the trimmed enoki mushrooms upside down and gently rinse them under running water while still in the bag. After rinsing, drain out any excess water. This is a quick and easy way to clean the mushrooms!

Step 3

Step 4

Wash the Korean chili peppers, remove the seeds if you prefer less heat, and finely mince them. If you enjoy a spicier kick, you can leave some of the seeds in.

Step 4

Step 5

In a bowl, combine the minced chili peppers with all the sauce ingredients: 1 Tbsp soy sauce, 1 Tbsp plum extract, 1 Tbsp cooking wine, 0.5 Tbsp fish sauce, 0.5 Tbsp minced garlic, 0.5 Tbsp sesame oil, and a pinch of sesame seeds. Stir well with a spoon until evenly mixed to create a flavorful sauce.

Step 5

Step 6

Slice the green parts of the scallions into pieces about 1 to 1.5 cm long. These pieces will be used to skewer the enoki mushrooms.

Step 6

Step 7

Take a small bundle of the prepared enoki mushrooms and firmly insert them into the gaps of the sliced scallion pieces. Press them in well to ensure they are securely attached.

Step 7

Step 8

Adjust the amount of enoki mushrooms you use based on the thickness of the scallion pieces. For thicker scallions, you can use a more generous amount of mushrooms for a fuller skewer.

Step 8

Step 9

Heat a lightly oiled pan over medium heat. Place the prepared enoki mushroom skewers onto the hot pan, one by one.

Step 9

Step 10

Using chopsticks, gently turn the skewers and cook for about 1-2 minutes per side, just until lightly golden. Be careful not to overcook, as this can diminish the chewy texture. They should be slightly browned.

Step 10

Step 11

For the best taste, serve the enoki mushroom skewers warm. Arrange the cooked skewers neatly on a serving plate or a grill pan. They look as appealing as they are delicious!

Step 11

Step 12

Just before serving, drizzle the prepared savory sauce generously over the enoki mushroom skewers. The salty and umami-rich sauce perfectly complements the chewy mushrooms.
