I had too many apples and was wondering what to do with them, so I decided to make an apple tart! Let’s make it together.^^

For the Tart Dough

  • 300g cake flour
  • 150g cold unsalted butter, cut into cubes
  • 10g sugar
  • 5g salt
  • 50g ice water

For the Apple Filling

  • 1/2 apple, peeled, cored, and roughly chopped or ready for blending
  • 30g milk
  • 10g sugar

Cooking Instructions

First, let’s make the tart dough. In a large bowl, combine the cake flour and the cubed cold butter. Use your fingertips or a pastry blender to rub the butter into the flour until the mixture resembles coarse breadcrumbs, with pieces of butter about the size of small peas. This will give your tart crust a lovely texture.

Add the sugar and salt to the bowl and mix lightly. Gradually add the ice water, about 50g in total, and mix until the dough just starts to come together. Be careful not to overwork the dough. Once it forms a cohesive ball, gently press it together with your hands until it’s smooth. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This resting period allows the gluten to relax, resulting in a crispier crust.

While the dough is chilling, let’s prepare the delicious apple filling. In a blender, combine the peeled and cored apple (1/2), milk (30g), and sugar (10g). Blend until smooth. If you prefer some texture in your filling, you don’t need to blend it completely smooth. You’ll have a wonderfully fragrant apple puree.

Take the chilled dough out of the refrigerator. It will be quite firm. Lightly dust your work surface with flour. Roll out the dough thinly using a rolling pin. If you don’t have a rolling pin, a clean glass can work in a pinch! Aim for a thickness of about 2-3mm. Then, using a small cup or a cookie cutter that matches your tart tin size, cut out circles from the dough. Try to minimize re-rolling the dough scraps to keep the crust tender.

Now, prepare your tart tins. Lightly butter the inside of each tin. This step ensures the tart shells release easily after baking. Carefully place the cut dough circles into the prepared tins, gently pressing them to fit the shape. Use a fork to prick the bottom of the dough all over. This will prevent the crust from puffing up during baking. Bake in a preheated oven at 200°C (400°F) for about 10 minutes, or until lightly golden.

Once the tart shells are baked, carefully pour the prepared apple filling over them. And voilà! Your delicious apple tart is ready! While it might not look overly fancy, the combination of the sweet apple filling and the buttery, crisp crust is absolutely delightful. It’s wonderful served warm or chilled.
