Main Ingredients

  • 400g prepared lotus root
  • 1 red chili pepper
  • 2 Tbsp cooking oil
  • 1 tsp vinegar
  • A little sesame oil
  • A little toasted sesame seeds

Braising Sauce

  • 2 cups water
  • 1/3 cup soy sauce
  • 1 piece dried kelp (dashima)
  • 5 Tbsp corn syrup (mulyeot)
  • 3 Tbsp cooking wine (mirin/masul)
  • 2 Tbsp plum extract (maesilcheong)

Cooking Instructions

Step 1

Prepare all the ingredients for a delicious lotus root stew. Clean and peel the lotus root thoroughly.

Remove the seeds from the red chili pepper and slice it into pieces about 1cm long. These will add a beautiful color and enhance the flavor of the stew.

Place the prepared lotus root in a pot and add enough water to cover it. Add 1 tablespoon of vinegar and boil for about 10 minutes. The vinegar helps prevent browning and maintains the crisp texture of the lotus root.

Be careful not to overcook the lotus root, as it can lose its crispness. Adjust the boiling time based on the thickness of the lotus root slices. Typically, boiling for around 10 minutes and then rinsing under cold water is recommended.

Heat 2 tablespoons of cooking oil in a pan. Add the boiled and drained lotus root and stir-fry over medium-low heat for about 2-3 minutes. This step helps to dry out the lotus root, allowing it to absorb the braising sauce better.

Now, add all the braising sauce ingredients (2 cups water, 1/3 cup soy sauce, 1 piece dried kelp, 5 Tbsp corn syrup, 3 Tbsp cooking wine, 2 Tbsp plum extract) to the pan and mix well. Don’t forget the dried kelp, as it adds a wonderful umami flavor! Simmer over medium-low heat until the lotus root is well-infused with the sauce.

Once the sauce begins to thicken, add the sliced red chili pepper and continue to simmer. The red chili pepper adds a visually appealing color. The key is to reduce the sauce until it is almost completely absorbed by the lotus root.
