  • 60g milk, room temperature
  • 110g unsalted butter, softened to room temperature
  • 4 large eggs, room temperature
  • 60g almond flour
  • 40g cocoa powder, sifted
  • 6g baking powder
  • 100g dark chocolate chunks or bar

Begin by creaming the softened butter in a bowl until smooth using an electric mixer or whisk. Ensure the butter is at room temperature for optimal creaming.

Gradually add sugar and powdered sugar to the creamed butter, about 2-3 additions, and continue to whip until well combined and slightly lighter in color. This step helps dissolve the sugar crystals.

Add the room-temperature eggs one at a time, whipping well after each addition. Adding them all at once can cause the batter to curdle, so patience here is key. Continue whipping until the mixture is smooth and pale yellow.

In a separate bowl, sift together the all-purpose flour, almond flour, cocoa powder, and baking powder at least 2-3 times. This aerates the dry ingredients, preventing lumps and ensuring a tender muffin crumb.

Add the sifted dry ingredients to the butter-egg mixture and gently fold them in using a spatula until just combined. Be careful not to overmix. Then, pour in the room-temperature milk and mix until the batter is smooth. Overmixing can result in tough muffins.
