I quickly made this delicious Napa Cabbage salad with a baby napa cabbage I picked up from the mart after visiting the butcher shop for pork belly! It’s so simple to make while you’re boiling pork, so you don’t have to worry even if you can’t make kimchi for the holidays. Today, let’s prepare a wonderful meal with this simple yet delicious Napa Cabbage salad!

To make a delicious Napa Cabbage salad, first prepare fresh baby napa cabbage. If you don’t have baby napa cabbage, regular napa cabbage will also work wonderfully for a tasty salad.

It’s important to wash the baby napa cabbage you bought from the mart thoroughly. First, trim off the base of the cabbage, then separate the leaves one by one and rinse them carefully under running water. It’s best to wash it meticulously, especially since I’ve found bugs inside cabbage before.

We’ll arrange the clean baby napa cabbage leaves nicely. I’ll set aside the small, tender leaves from the center to be enjoyed as wraps, and I’m saving the outer 3 leaves to make cabbage pancakes later.

The small inner leaves will be tossed directly into the salad. For the larger cabbage leaves, cut them into 3-4 bite-sized pieces. While it’s a matter of personal preference, I find that not cutting the smaller leaves makes for a crispier and more delicious salad.

Now, place all the prepared chopped and small cabbage leaves into a large bowl. It’s time to add the seasoning to make this delicious salad. Shall we mix in the dressing and make it taste great?

Let’s make the salad dressing. Prepare 1 tablespoon of sesame seeds, 1.5 tablespoons of gochugaru (red pepper flakes), 0.5-1 tablespoon of sesame oil, 0.5 tablespoon of fish sauce (like anchovy sauce), and 0.5 teaspoon of salt. I added half a tablespoon of sugar to give it a slightly sweet flavor, similar to bossam kimchi. Feel free to adjust to your taste.

Add all the prepared dressing ingredients to the bowl with the cabbage and gently mix with your hands. Toss until the seasoning is evenly coated on the cabbage leaves. Your delicious Napa Cabbage salad is now complete!

Here’s a simply made Napa Cabbage salad without any pre-salting! Isn’t it incredibly easy to make? Geotjeori is best enjoyed immediately after mixing, so I recommend making it around the time your pork is almost done. This way, you can enjoy the freshest and crispiest taste.

Serve the salad with thinly sliced onions that have been soaking in cold water, and enjoy it wrapped together with the cabbage salad and warm pork. It’s an absolutely fantastic combination!
