Ingredients- 2 large eggs
- 1/2 Tbsp salted shrimp (saeujeot)
- A little bit of chives
- 10 anchovies (for broth)
- 1/2 onion
- 950ml water
- A little bit of toasted sesame seeds
Cooking Instructions
Step 1
1. First, finely chop the chives after washing them thoroughly. In a separate bowl, whisk the 2 eggs until well combined. Having your ingredients prepped makes cooking much smoother.

2. Pour about 950ml of water into a pot. Add the 10 anchovies and the halved onion to the water. Bring to a boil over medium-high heat, then reduce to medium heat and simmer for about 10 minutes to create a clear and flavorful broth. Once the broth has simmered, remove and discard the anchovies and onion solids for a clean soup base. (Starting with 950ml of water and simmering will result in approximately 900ml of broth).

3. Add 1/2 tablespoon of salted shrimp (saeujeot) to the well-simmered, clear broth to add a savory depth. The saltiness of salted shrimp can vary by brand and region, so taste and adjust the amount to your preference. Once the salted shrimp is added, bring the soup to a rolling boil and let it simmer to allow the shrimp flavor to fully infuse into the broth.

4. Now, as the soup comes to a boil, slowly drizzle the whisked eggs into the pot. You can use a ladle to pour the eggs in a thin, circular motion, allowing them to cook gently without clumping.

5. After adding the egg, resist the urge to stir immediately. Wait a moment for the egg to set and form soft curds. You’ll see the cooked egg floating gently on the surface of the soup.

6. Once the egg has mostly cooked and floated to the top, add the prepared chopped chives and give it a gentle stir. Turn off the heat immediately after adding the chives. Chives can become mushy if overcooked, so adding them at the very end for just a quick cook is best to preserve their fresh flavor and crispness.
