Hearty and Delicious Vegan Curry

Hello everyone! This is ‘Egeupshik’. Today, we’re going to make a delicious vegan curry sauce that pairs wonderfully with rice or even noodles like udon. This sauce is packed with flavor from vegetables alone!

Ingredients (Serves 60)

  • Curry powder 1kg
  • Water 3L
  • King oyster mushrooms 500g
  • Potatoes 1kg
  • Onions 5 ea
  • Honey 100g
  • Salt 200g
  • Black pepper 100g

Cooking Instructions

Step 1

First, prepare the vegetables that will form the base of our curry. Peel the potatoes and onions, then cut them into roughly 2-3 cm cubes. It’s helpful to keep the potatoes and onions separate for now, as they will be cooked at slightly different times. Slice the king oyster mushrooms into similar 2-3 cm pieces.

Heat a generous amount of cooking oil in a large pot or deep pan over medium heat. Add the cubed potatoes and sauté them. Cook until the potatoes start to become slightly translucent and their surfaces begin to soften.

Once the potatoes are partially cooked, add the chopped onions, salt, and black pepper to the pot. Continue to stir-fry until the onions turn a nice golden brown and become fragrant. This step is crucial for developing a deep, sweet flavor in the curry as the onions caramelize.

If you wish to add a non-vegan element, now is the time to add your chosen protein (e.g., meat). For a truly vegan curry, you can omit this step or add plant-based alternatives like tofu or soy chunks. Next, add the sliced king oyster mushrooms and stir-fry until they soften and their moisture releases.

In a separate bowl, combine the 1kg of curry powder with 3L of water. Gradually add the water while whisking continuously to create a smooth, lump-free paste. Adding the water little by little helps to ensure the curry powder dissolves completely without clumping.

Once all the vegetables are tender, pour the prepared curry paste mixture into the pot. Bring the curry to a boil over high heat, stirring frequently to prevent it from sticking to the bottom. Once it starts boiling, reduce the heat to medium-low and let it simmer.

As the curry simmers and thickens, stir in the 100g of honey. Honey adds a wonderful depth of flavor and a touch of sweetness that complements the spices. Taste the curry and adjust seasoning with additional salt or pepper if needed. Continue simmering for a few more minutes until it reaches your desired consistency.
