Savory Pork Belly and Chive Bibimbap

Don’t let leftover chives go to waste after enjoying pork belly and fresh chive salad! You can make a fantastic meal with this super easy chive bibimbap, packed with fragrant chives and savory pork belly. Here’s a recipe to whip up a delicious bibimbap with your remaining ingredients.

Main Ingredients

  • 1 handful of chives (approx. 50-70g)
  • 1 bowl of warm cooked rice
  • 1 egg
  • 1 handful of pork belly (approx. 100g)

Cooking Instructions

Step 1

Take a handful of fresh chives and wash them thoroughly under running water. Make sure to rinse off any dirt or debris.

Drain the washed chives and chop them into short, bite-sized pieces, about 1cm long. This makes them easier to mix and eat with the rice.

Heat a little cooking oil in a frying pan and crack the egg into it. You can cook it sunny-side up for a soft, runny yolk or over-hard for a firm yolk – it’s up to your preference!

In another frying pan (or the same one wiped clean with a paper towel), cook the pork belly. Lightly season it with herb salt or pepper for enhanced flavor. Grill until golden brown and crispy on both sides, then chop into small, bite-sized pieces.

Place a bowl of warm, steaming rice into a large bowl or a dde-ba-g (Korean earthenware bowl). Gently spread the rice so it doesn’t clump together.

Drizzle 1 tablespoon of sesame oil over the warm rice to add a nutty aroma. Let the fragrance of the sesame oil soak into the rice.

Generously pile the prepared chives on top of the rice. The fresh aroma and crisp texture of the chives will elevate the bibimbap.

Artfully arrange the cooked pork belly and the golden-fried egg on top of the chives. Making it visually appealing will enhance the dining experience.

Add 1 tablespoon of gochujang (using a regular spoon) to the center. Adjust the amount according to your spice preference.
