  • Green Pepper 1
  • Red Pepper 1
  • Green Onion (white parts) a small amount

Seasoning Ingredients

  • Soy Sauce 1.5 Tbsp
  • Minced Garlic ½ Tbsp
  • Sesame Oil ½ Tbsp
  • Oligosaccharide 1 Tbsp (adjust sweetness as needed)
  • Black Pepper, a pinch
  • Toasted Sesame Seeds 1 Tbsp

Cooking Instructions

Boil a pot of water large enough to blanch the pink sausage. Blanching the sausage in boiling water helps remove impurities and results in a cleaner flavor.

Slice the pink sausage into diagonal pieces, about 0.7 to 1 cm thick. Slicing them too thinly can cause them to break apart, so aim for a moderate thickness for a pleasant texture.

Once the water is at a rolling boil, add the sliced pink sausage and blanch for a short time, about 30 seconds to 1 minute. Over-blanching can make them mushy.

Rinse the blanched sausage lightly under cold or running water. This step removes any residual oil and impurities, making the sausage more delicate in flavor.

Drain the blanched sausage thoroughly in a colander. Excess water can cause oil splattering when stir-frying.

Now, let’s stir-fry! Lightly oil a pan and add all the prepared vegetables (onion, peppers, green onion) and the drained sausage. Add all the seasoning ingredients: soy sauce, minced garlic, oligosaccharide, and black pepper. Gently mix everything together with your hands to ensure the vegetables are evenly coated with the seasoning.

Stir-fry the seasoned ingredients over high heat until the vegetables are just tender-crisp. It’s important to maintain the vegetables’ crispness, so stir-fry quickly over high heat rather than cooking for a long time. Cook only until the vegetables are slightly wilted and glossy.

Once the vegetables reach your desired doneness, turn off the heat. Finish by adding ½ Tbsp of sesame oil and 1 Tbsp of toasted sesame seeds, mixing gently. The nutty aroma of sesame oil and seeds will enhance the overall flavor.

Taste and adjust seasoning if needed, adding a little more soy sauce if it’s not salty enough. Transfer the finished pink sausage and vegetable stir-fry to a serving plate. This dish is also delicious served over a bowl of warm rice!
