Ingredients

  • 50g fresh wild chives (dallae)
  • 2 Tbsp vinegar
  • 2 Tbsp sugar
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp soy sauce (optional, for added umami)
  • Sesame seeds, a pinch (for nutty flavor)

Cooking Instructions

Step 1

Start by preparing the wild chives. Gently rinse them under running water, ensuring you remove any soil clinging to the roots. Trim away any wilted leaves or discolored parts. Lightly shake off excess water.

Step 1

Step 2

Cut the prepared wild chives into bite-sized pieces. Aim for lengths of about 3-4 cm, as this makes them easier to mix and eat. Handle them gently to preserve their delicate aroma.

Step 2

Step 3

Now, let’s make the flavorful dressing! In a bowl, combine 2 tablespoons of vinegar, 2 tablespoons of sugar, and 1/2 tablespoon of minced garlic. For an extra layer of umami, you can add about 1/2 tablespoon of soy sauce (either regular or light soy sauce). A pinch of sesame seeds adds a wonderful nutty depth. Whisk all the dressing ingredients together until well combined.

Step 3

Step 4

Add all the cut wild chives to the bowl containing the dressing. Be careful not to pack them down too tightly; gently place them into the bowl.

Step 4

Step 5

Gently toss the wild chives with the dressing until everything is evenly coated. Use your hands to carefully mix them, ensuring the dressing lightly coats each strand. Avoid overmixing, as this can make the chives soggy. The key is to mix just enough to combine. This salad is best enjoyed immediately for the freshest flavor!
