- 4 Shiitake Mushrooms
- 3-4 Cheongyang Peppers (adjust spiciness to your preference)
- 2 Green Peppers
- 1 Red Pepper
- 1 tsp Minced Garlic
Batter Ingredients- 2 Eggs
- 2 paper cups All-Purpose Flour (for frying)
- 0.5 paper cup Water
- 2 Eggs
- 2 paper cups All-Purpose Flour (for frying)
- 0.5 paper cup Water
Cooking Instructions
Step 1
First, prepare all your ingredients, including the mushrooms and peppers. Fresh ingredients are key to a delicious dish, so wash them thoroughly.
Step 2
Trim the tough ends of the king oyster mushrooms. For the shiitake mushrooms, remove the stems. Then, cut both types of mushrooms into large, bite-sized pieces. The goal is to maintain their chewy texture.
Step 3
Cut the green peppers in half lengthwise and carefully remove the seeds. Removing the seeds will result in a milder flavor. Finely chop the prepared green peppers.
Step 4
Following the same process as the green peppers, halve the Cheongyang peppers (for spiciness) and the red pepper (for color), remove the seeds, and then finely chop them. Feel free to adjust the number of Cheongyang peppers based on how spicy you like it.
Step 5
Now, let’s make the delicious sauce! In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp oyster sauce, 1 Tbsp ketchup, 1 Tbsp vinegar, 1 Tbsp sugar, and 1 Tbsp sesame oil. Stir well until the sugar is dissolved. This combination will create a well-balanced flavor.
Step 6
To make the crispy batter, combine 2 paper cups of all-purpose flour and 2 eggs in a bowl. Gradually add 0.5 paper cup of water while mixing until you achieve a smooth, slightly thin batter consistency without lumps. Avoid making the batter too thick, as this can result in a heavy coating.
Step 7
Add the prepared king oyster and shiitake mushrooms to the batter. Use chopsticks or a spatula to ensure each piece is evenly coated. Make sure all the mushrooms are well-covered with the batter.
Step 8
Pour about 2 paper cups of cooking oil into a deep pot and heat it over medium-low heat. Be careful not to let the oil get too hot, as the mushrooms can burn quickly. Carefully place the battered mushrooms into the hot oil, a few at a time, and fry for about 2 minutes until golden brown. The aim is to achieve a crispy exterior and a moist interior.
Step 9
Heat a separate pan with a small amount of cooking oil over medium heat. Add the chopped green peppers, Cheongyang peppers, red pepper, and 1 tsp minced garlic. Sauté for about 1 minute until fragrant. Then, add the fried mushrooms and pour in the prepared sauce. Stir quickly to coat the mushrooms evenly with the sauce and continue to cook for another 1-2 minutes.
Step 10
Finally, sprinkle your desired amount of nuts over the top for a delightful finishing touch! The crunchy nuts add extra texture and flavor, making your healthy mushroom gangjeong even more delicious. Serve immediately while hot for the best crispy texture!
