For all the busy professionals who often skip breakfast, here’s a simple and satisfying ‘Tortilla Brunch’ recipe. This quick and nutritious meal is designed to add a boost of energy to your daily routine.
Main Ingredients- 1 Tortilla
- 1/4 Onion
- 80g Beef (steak or bulgogi cut)
- A little cooking oil (for sautéing)
- A pinch of white pepper (to remove any gamey smell from beef)
- 2 Eggs
- A little margarine or butter (for toasting the tortilla)
- 3 Tbsp Tomato sauce
- Shredded cheese, as needed
Cooking Instructions
Step 1
To prepare your brunch, gather these fresh ingredients: 1 tortilla, tender beef, crisp onion, fresh eggs, plus tomato sauce and shredded cheese to add flavor.

Prepare 1/4 of an onion by slicing it thinly into strips. Sliced onions will add a soft texture when sautéed.

Take about 80g of beef, preferably a steak cut. For a pleasant bite, slice it into thick strips rather than very fine pieces. Adding a bit of beef makes the dish much more flavorful.

Heat a little cooking oil in a medium-sized pan over medium heat. Add the sliced onions and sauté until they become translucent. You don’t need to add salt at this stage, as the other ingredients will provide seasoning later.

Once the onions are translucent, push them to one side of the pan and add the sliced beef. Sprinkle a pinch of white pepper over the beef to eliminate any gamey odor and enhance its flavor.

If the beef releases too much oil while cooking, gently blot it with a paper towel. This helps to keep the dish from being too greasy and ensures a cleaner taste.

In a separate small pan, or after removing the sautéed ingredients from the first pan, crack in 2 eggs. Lightly beat the yolks and spread them out to cook evenly, aiming for a soft scramble.

Once the eggs are cooked, evenly distribute the sautéed beef and onions over the top. Arrange them nicely to create a beautiful layer.

Now, it’s time to toast the tortilla. In another pan, melt a little margarine or butter over low heat. Once melted, place the tortilla in the pan and toast it on both sides until golden brown. Be careful not to use high heat, as it can burn easily; maintain a low temperature.

Carefully place the egg, beef, and onion mixture onto the toasted tortilla. Ensure all the fillings are centered for easy rolling.

Generously spread about 3 tablespoons of delicious tomato sauce over the fillings. The tomato sauce will give it a pizza-like flavor, making this a fantastic snack for kids too! Finally, sprinkle a good amount of shredded cheese over everything. Cook over low heat until the cheese is nicely melted. This brunch is also a great snack option for children!
