Ingredients

  • T-Asia Curry 1 pack
  • Udon noodles 1 pack
  • Garlic 3 cloves
  • Cabbage 100g
  • 1/2 zucchini
  • Egg 1
  • Shiitake mushrooms 2
  • Scallions a little
  • Fried onion flakes 1 Tbsp
  • Olive oil to taste
  • Pepper to taste

Cooking Instructions

Step 1

First, prepare the vegetables for the curry udon. Since we’ll be roasting them in the air fryer, cut them into slightly larger, bite-sized pieces. (Tip: Cutting vegetables larger helps them retain moisture and improves texture after roasting.)

Drizzle olive oil evenly over the chopped vegetables. The olive oil will coat the surface of the vegetables, ensuring they cook evenly.

Place the prepared vegetables from step 1 onto parchment paper, spread them out, and lightly season with pepper for added flavor.

Place the parchment paper with the vegetables into the air fryer. Set the temperature to 170°C (340°F) and cook for 15 minutes. Flipping them halfway through will ensure more even roasting.

In a separate pot, bring water to a boil and add the udon noodles. Cook for about 2-3 minutes, gently separating the noodles so they don’t clump together. (Tip: You can reserve some of the noodle cooking water to add to the sauce later.)

The T-Asia curry is in a retort pouch. Slightly open the top of the pouch and microwave for 1 minute to heat. (Tip: Heating with the pouch only slightly opened is convenient and safer.)

In a pan, combine the cooked udon noodles and the heated curry sauce. Stir-fry together, ensuring the curry sauce coats the noodles thoroughly.

The key is to stir-fry until the curry sauce thickens and clings to the udon noodles, similar to the consistency of Jjapaghetti sauce. (Tip: If it becomes too thick, add a little of the reserved noodle water or plain water.)

Transfer the finished curry udon to a serving bowl. Arrange the roasted vegetables from step 3 and fried onion flakes attractively on top. A fried egg or chopped scallions also make a great garnish.
