  • Cooking : Seasoned mix
  • Servings : 2 servings

Main Ingredients

  • 200g Mixed Wrap Vegetables (e.g., lettuce, perilla leaves, romaine, baby bok choy – mix your favorites)
  • 1/3 Onion (thinly sliced into strips)

Flavorful Dressing

  • 3 Tbsp Gochugaru (Korean chili powder – for color and mild spiciness)
  • 1 Tbsp Fish Sauce (anchovy base – for umami)
  • 1 Tbsp Fish Sauce (tuna base – for deep flavor)
  • 1 Tbsp Maesil Cheong (plum extract – for a subtle sweetness and tang)
  • 2 Tbsp Oligodang (corn syrup or rice syrup – for gloss and sweetness)
  • 3 Tbsp Toasted Sesame Seeds (for a nutty finish)
  • 1 Tbsp Minced Scallion (for a refreshing note)
  • 1 Tbsp Minced Garlic (for a pungent aroma)

Cooking Instructions

Step 1

Gently wash the mixed wrap vegetables under running water to ensure they are clean and free of any dirt. Thoroughly rinsing is key for a crisp salad. After washing, drain them well in a colander. Excess water can dilute the dressing, so it’s important to remove as much as possible.

Step 1

Step 2

Once the vegetables are drained, cut them into bite-sized pieces. Cutting them too small might reduce the satisfying chewiness, so aim for pieces that are easy to eat in one bite. Larger leaves like perilla can often be left whole.

Step 2

Step 3

Peel and wash the onion, then slice it thinly into strips. Thinly sliced onions blend seamlessly with the other ingredients, offering a milder flavor. If you prefer a less pungent onion taste, you can soak the slices in cold water for a few minutes before using.

Step 3

Step 4

Finely mince the scallion. After washing, trim off the root end and chop it very finely. Finely minced scallion integrates well into the dressing without clumping, adding a pleasant freshness.

Step 4

Step 5

In a large mixing bowl, combine all the dressing ingredients: gochugaru, anchovy fish sauce, tuna fish sauce, maesil cheong, oligodang, minced scallion, and minced garlic. Stir them together thoroughly to create a well-mixed dressing. Taste the dressing and adjust seasonings if necessary, according to your preference.

Step 5

Step 6

Now, add the cut wrap vegetables and sliced onion to the bowl with the dressing. Gently toss everything together with your hands, ensuring the dressing coats all the vegetables evenly. Finally, sprinkle generously with toasted sesame seeds for a nutty aroma and flavor. Your delicious Mixed Greens Geotjeori is ready! It’s best enjoyed immediately, but you can also let it sit for a short while to allow the flavors to meld further.
