  • Cooking : Grilled / Roasted
  • Servings : 1 serving
  • Cooking Time : Within 30 minutes

Main Ingredients

  • 3 pieces of chicken cut for stew (dakbokkeumtang), about 600-800g

Butter Garlic Seasoning

  • 1 Tbsp garlic powder (can substitute with 1 Tbsp minced fresh garlic)
  • 3 tsp butter (approx. 15g)
  • A pinch of dried parsley flakes
  • 2 pinches of salt
  • A pinch of black pepper

Cooking Instructions

Step 1

First, let’s prepare the butter garlic seasoning. Measure out 1 tablespoon of garlic powder, 3 teaspoons of butter, a pinch of parsley flakes, and 2 pinches of salt. If you don’t have garlic powder, you can use 1 tablespoon of freshly minced garlic for a wonderfully aromatic result. For the butter, you can let it soften slightly at room temperature or simply snip off about 3 teaspoons’ worth from the corner of the butter stick for easy measuring.

Step 1

Step 2

In a small bowl, combine the garlic powder, butter, parsley, and salt. Mix them together roughly. This seasoning will be quite dry, almost powdery, which is perfectly fine. Don’t worry if it doesn’t form a paste; it will coat the chicken well during cooking.

Step 2

Step 3

Now, let’s prepare the chicken. Take 3 pieces of chicken, typically used for Korean chicken stew (dakbokkeumtang), directly from the freezer without thawing. This helps the seasoning adhere better and locks in the juices. Gently pat the surface of the chicken pieces dry with a paper towel. Then, generously coat both sides of the chicken with the prepared butter garlic seasoning mix. It’s okay if the seasoning doesn’t cover the chicken completely. The natural moisture from the chicken will help it stick, and as the chicken cooks, its own juices will render out and distribute the seasoning evenly.

Step 3

Step 4

Place the lightly seasoned chicken pieces into the inner pot of your rice cooker. Arrange them so that they are not too tightly packed. Sprinkle any remaining seasoning mix over the top of the chicken. Finish by sprinkling a pinch of black pepper. Now, select the ‘Reheat’ or ‘Multi-Cook’ function on your rice cooker and set it for 9 minutes. Start the cooking cycle.

Step 4

Step 5

Once the first 9-minute reheat cycle is complete, open the rice cooker. You’ll notice that the chicken has begun to thaw, and some water and chicken juices will have released. Spoon some of this flavorful liquid over the chicken pieces. Then, carefully flip each piece of chicken to ensure even cooking and flavor distribution. Close the lid again and run the ‘Reheat’ function for another 9 minutes.

Step 5

Step 6

For the final cooking stage, flip the chicken pieces one more time. This ensures that all sides are beautifully browned and infused with flavor. Run the ‘Reheat’ function for a third 9-minute cycle to complete the cooking process. A helpful tip: if you start with thawed chicken, you might only need two 9-minute reheat cycles (18 minutes total). However, for frozen chicken, three cycles ensure it’s cooked through perfectly.

Step 6

Step 7

After the three reheat cycles, your Butter Garlic Baked Chicken is ready! It should be thoroughly cooked, tender, and juicy inside, with a wonderfully seasoned exterior.

Step 7

Step 8

It’s time to enjoy your delicious creation! Carefully remove the hot, glistening Butter Garlic Baked Chicken from the rice cooker and plate it. The aromatic blend of garlic and butter, combined with the rich chicken juices, creates an incredibly satisfying flavor with every bite. This dish is perfect as a main course, a side dish, or even as a savory snack. Enjoy your home-cooked masterpiece!
