Hello everyone! This is Bebetokki Mom, raising two sons and managing a home-based business. I’m excited to reintroduce my cooking recipe series after a brief hiatus! While raising my boys and consistently working from home, I’ve been busy with parenting diaries and reviews, which unfortunately meant less time for my beloved food recipes. But I’m determined to share them more often from now on! Today, I’m delighted to present ‘Soy Braised Pork Ribs’! It’s a dish that will make everyone, young and old, want to clear their plates.
Ingredients- Prepared Pork Back Ribs 600g x 2 packs
- Bay Leaves
- Cooking Wine (or Mirin) 1/2 cup
- Oligosaccharide (or Corn Syrup) 10 Tbsp
- Sugar 2 Tbsp
- Minced Garlic 1 Tbsp
- Scallion (chopped)
- Soy Sauce 1 cup
Cooking Instructions
Step 1
First, soak the pork back ribs in cold water for over 30 minutes to remove any blood. This step is crucial to eliminate any gamey odor. Place the ribs in a pot, add enough water to cover them, along with the bay leaves and 1/2 cup of cooking wine. Bring to a boil and simmer for 10 minutes. This initial boiling helps to effectively remove impurities and any lingering smell from the ribs.
Step 2
While the ribs are parboiling, let’s prepare the delicious sauce! In a bowl, combine 1 cup of soy sauce, a splash of cooking wine (optional), 10 Tbsp of oligosaccharide, 2 Tbsp of sugar, 1 Tbsp of minced garlic, and the chopped scallions. Mix everything thoroughly until well combined. For a hint of spiciness, you can add finely chopped chili peppers.
Step 3
After parboiling, drain the ribs and rinse them thoroughly under running cold water. Once rinsed, make several cuts or scores into the ribs. This will allow the sauce to penetrate deeply into the meat, resulting in a richer flavor. Be careful not to cut too deeply and separate the meat too much.
Step 4
Now, place the scored ribs into a clean pot along with 8 cups of water (1.6L). Pour the prepared sauce over the ribs and toss to coat them evenly. Cover the pot and let the ribs marinate for about 2 hours. Turning the ribs occasionally will ensure the sauce marinates evenly.
Step 5
Simmer the ribs over medium-low heat until the sauce has thickened and the ribs are tender, which should take about 40 minutes to 1 hour. If the sauce reduces too much during cooking, you can add a little water. In the final few minutes, increase the heat slightly to reduce the sauce to a glossy finish, creating a beautiful glaze for your soy braised pork ribs. Serve hot with rice!
