Main Ingredients- 2 bowls cooked rice
- 2 pieces mackerel fillets, prepared (boneless)
- 1 onion, thinly sliced
- Scallions, chopped, for garnish (optional)
- Wasabi paste, a small amount (to taste)
Teriyaki Sauce- 1 Tbsp minced garlic
- A pinch of grated ginger (approx. 1/2 tsp)
- 2 Tbsp sugar
- 2 Tbsp mirin (or sake)
- 4 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1 Tbsp minced garlic
- A pinch of grated ginger (approx. 1/2 tsp)
- 2 Tbsp sugar
- 2 Tbsp mirin (or sake)
- 4 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Begin by preparing the mackerel fillets. Rinse the two prepared mackerel fillets under cold water and pat them dry thoroughly with paper towels. Ensure any bones are removed for a pleasant eating experience.
Step 2
Preheat your air fryer to 180°C (350°F). Line the air fryer basket with parchment paper. Place the mackerel fillets skin-side down in the basket. Air fry for approximately 25 minutes, or until the skin is golden brown and crispy.
Step 3
After 25 minutes, carefully flip the mackerel fillets. Continue to air fry at the same temperature of 180°C (350°F) for another 15 minutes, or until the fish is cooked through and tender. Adjust the time as needed based on the thickness of your fillets.
Step 4
While the mackerel is cooking, prepare the aromatics and garnish. Thinly slice one onion. If using scallions, wash and finely chop them. You can also use pre-chopped frozen scallions if available.
Step 5
Now, let’s make the teriyaki sauce. In a small bowl, combine the minced garlic, grated ginger, sugar, mirin, soy sauce, sesame oil, and toasted sesame seeds. Whisk everything together until the sugar is fully dissolved.
Step 6
Heat a frying pan over medium heat with a little cooking oil. Add the sliced onions and sauté until they become soft and translucent, about 5-7 minutes. Stir occasionally to prevent sticking.
Step 7
Once the onions are softened, reduce the heat to low. Pour the prepared teriyaki sauce over the onions. Stir and cook for about 1 minute, allowing the sauce to thicken slightly and coat the onions beautifully. Be careful not to burn the sauce.
Step 8
It’s time to assemble your rice bowls. Divide the cooked rice into two serving bowls. On one side of each bowl, spoon the teriyaki-glazed onions. On the other side, arrange the chopped scallions.
Step 9
Finally, place the perfectly grilled mackerel fillets on top of the rice and onions. For an extra kick of flavor, add a small dollop of wasabi paste next to the mackerel. This adds a wonderful contrast to the rich, savory-sweet flavors. Enjoy your delicious and impressive Teriyaki Grilled Mackerel Rice Bowl!
