Main Ingredients

  • 50g dried shiitake mushrooms (soaked in water)
  • 200g beef (thinly sliced for bulgogi or japchae)
  • 1 onion (sliced thinly)
  • 1/2 stalk green onion (sliced diagonally)
  • 100g oyster mushrooms (torn into bite-sized pieces)

Shiitake Mushroom Marinade

  • 1 Tbsp soy sauce
  • 1/3 Tbsp sesame oil

Beef Marinade

  • 2 Tbsp soy sauce
  • 1/3 Tbsp sesame oil
  • 1/3 Tbsp minced garlic
  • 1 Tbsp rice wine or cooking sake (to remove odor)
  • 1/2 Tbsp plum extract (for sweetness and flavor)
  • 1/3 Tbsp ginger syrup (or a little minced ginger)

Finishing Touch

  • 1/3 Tbsp sesame oil (for extra nutty aroma)

Cooking Instructions

First, soak the dried shiitake mushrooms in lukewarm water until they are fully rehydrated, which usually takes about 30 minutes to an hour. Once softened, gently squeeze out excess water and slice them into bite-sized pieces. In a bowl, combine the rehydrated shiitake mushrooms with the ‘Shiitake Mushroom Marinade’ ingredients: 1 Tbsp soy sauce and 1/3 Tbsp sesame oil. Gently mix them together to marinate. This step infuses the mushrooms with a subtle, delicious flavor.

Next, marinate the beef using all the ‘Beef Marinade’ ingredients. Mix well by gently massaging the sauce into the meat. Marinating with soy sauce, sesame oil, minced garlic, cooking sake, plum extract, and ginger syrup will make the beef more tender and allow the flavors to penetrate deeply. We recommend marinating for at least 10 minutes.

Now, let’s start stir-frying! Heat a lightly oiled pan over medium heat. Add the thinly sliced onion and sauté until it becomes translucent. When the beef is about 80% cooked, add the prepared oyster mushrooms and diagonally sliced green onions to the pan. Stir-fry briefly just until the ingredients are combined. Oyster mushrooms cook quickly, so avoid overcooking them. You want to maintain a pleasant crispness from the vegetables and a tender texture from the mushrooms.

Finally, taste the dish. If you feel it needs more seasoning, you can add a tiny bit more soy sauce or fish sauce. (I found the initial marinade was enough!) Once all the ingredients are well combined, turn off the heat. Drizzle with 1/3 Tbsp of sesame oil for a final touch of nutty aroma, and give it a final stir.
