Step 1
First, finely chop the green onion. Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the chopped green onion and stir-fry for about 1 minute until fragrant, releasing its aroma. This step significantly enhances the overall flavor.
Step 2
Cut the Spam into bite-sized pieces (cubes or slices) and add it to the pan. Sauté for 2-3 minutes until the Spam is lightly browned and slightly crispy. Frying the Spam makes it wonderfully savory and adds a delightful texture.

Add the finely chopped kimchi to the pan and stir-fry with the Spam. Once the kimchi is slightly softened, add 1/2 Tbsp of oyster sauce and a pinch of pepper to season. Step 4
Gently push the stir-fried mixture to one side of the pan. Crack the 2 eggs into the empty space. Immediately cover the pan with a lid and reduce the heat to low. Cook for 2-3 minutes until the egg whites are set and the yolks are still runny (sunny-side up). If you prefer a fully cooked yolk, continue cooking a bit longer.
