Main Ingredients- 300g Napa Cabbage Kimchi (well-fermented)
- 2 small cans Spam
- 1 small Onion
- 4 bowls Kamut Rice (warmed)
Seasoning- 2 Tbsp Olive Oil
- 1 Tbsp Oyster Sauce (or Soy Sauce)
- 1 Tbsp Sugar
- 1 tsp Sesame Oil
- 2 Tbsp Olive Oil

Cooking Instructions
Step 1
Chop the kimchi into bite-sized pieces, about 1 to 1.5 cm. If you want to avoid using a cutting board or worrying about kimchi juice stains, you can conveniently cut it directly with scissors inside a rice bowl, which also minimizes washing up.
Step 2
Dice the Spam into small cubes, similar in size to the chopped kimchi. The rich, savory flavor of the canned ham will add a deep taste to your fried rice.

Peel and finely mince the onion. Minced onion releases its natural sweetness when cooked, enhancing the overall flavor of the fried rice.

Heat olive oil in a pan over medium heat. Add the chopped kimchi and minced onion, then stir-fry for about 3-4 minutes until the onion becomes translucent and the kimchi softens.

To the kimchi and onion mixture in the pan, add the oyster sauce and sugar. Increase the heat to high and stir-fry for another 2-3 minutes. The umami from the oyster sauce and the subtle sweetness from the sugar balance the tanginess of the kimchi. (You can substitute soy sauce for oyster sauce if preferred.)

Add the warmed rice to the pan. Gently break up any clumps of rice with your spatula and mix it thoroughly with the kimchi and sauce mixture. Cook over medium-low heat, ensuring the rice doesn’t burn.

Continue to stir-fry for about 3 more minutes until the rice is well combined with the seasoning. Turn off the heat and drizzle with sesame oil for a final touch.
