Introducing a recipe for silken tofu and egg custard, made even more delicate and savory with the addition of silken tofu to traditional steamed eggs. No more waiting by the stove! This custard is incredibly easy to make in the microwave in just 8 minutes. It’s a perfect side dish for children and a great option for a healthy diet meal.

Ingredients

  • 3 large eggs
  • 1/2 pack silken tofu (approx. 200g)
  • 1 Tbsp minced carrot (optional)
  • 1 Tbsp chopped green onion (optional)
  • 1/3 tsp salt
  • 1 tsp tuna extract (or Korean soy sauce for soup)
  • A little sesame oil (for finishing)
  • 100ml water (or dashi broth)
  • 2 pieces dried kelp (approx. 5x5cm)

Cooking Instructions

Step 1

First, soak 2 pieces of dried kelp in 100ml of water for 10 minutes to make kelp broth. You can also use plain water if you prefer. Minced carrot and chopped green onion are optional and can be omitted.

Prepare half a pack of silken tofu (about 200g). Carefully cut the opened pack in half and gently slide the tofu out onto a plate. Use a knife to cut the tofu into approximately 6 large pieces. This helps the tofu hold its shape when the egg mixture is added.

Arrange the cut silken tofu pieces in a microwave-safe bowl.

In a separate bowl, crack 3 eggs. Add 1/3 tsp salt and 1 tsp tuna extract (or Korean soy sauce for soup). Pour in the kelp broth (100ml) and whisk gently, being careful not to create too many bubbles. The tuna extract helps to reduce any eggy smell and adds a subtle savory flavor.

Add 1 Tbsp each of chopped green onion and minced carrot to the egg mixture and stir lightly. These vegetables add color and nutrients. If you’re not using vegetables, you can skip this step.

Gently pour the egg mixture over the silken tofu in the bowl, ensuring it covers the tofu evenly.

Cover the bowl with a microwave-safe lid or plastic wrap. Microwave on high for 5 minutes. After 5 minutes, check the custard’s firmness. If it’s mostly set but still slightly wobbly, microwave for an additional 3 minutes, for a total of 8 minutes. Cooking times may vary depending on your microwave’s power.

Once cooked, drizzle a little sesame oil over the warm silken tofu and egg custard. This not only enhances the flavor, making it more savory and delicious, but also helps to mask any lingering eggy aroma. Enjoy the wonderfully smooth and delicate texture!
