Porridge Ingredients

  • 1 cup rice
  • 7 cups water

Seasoning Sauce (Optional)

  • 2 Tbsp soy sauce
  • 1/2 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds (crushed)

Cooking Instructions

Step 1

First, rinse 1 cup of rice under cold running water several times until the water runs clear. Place the rinsed rice in a bowl and soak it in fresh water for about 30 minutes. Soaking the rice makes the grains tender, which helps the porridge cook faster and become easier to digest.

Add 7 cups of water to the soaked rice and place the pot over high heat. Cooking on high heat initially helps the rice grains break down.

Once the porridge begins to boil, immediately reduce the heat to low. Let it simmer gently for about 10 minutes, stirring frequently with a spoon to prevent the rice grains from clumping or sticking to the bottom of the pot. Be mindful that covering the pot completely can cause it to boil over easily, so it’s best to keep the lid slightly ajar or monitor it closely.

After simmering for another 10 minutes or so, the rice will absorb the liquid, becoming thicker, and you’ll notice its volume increase significantly. From this point onwards, keep the heat very low and continue stirring until the rice grains are fully broken down and tender. If the porridge becomes too thick or seems to lack liquid, gradually add more hot water while stirring to reach your desired consistency.

When the rice grains are as soft and broken down as you like and the porridge has reached your desired thickness, turn off the heat and let it sit for a moment to cool slightly. Your delicious white rice porridge is now ready!

For added flavor, you can prepare a simple seasoning sauce to enjoy with your porridge. In a small bowl, combine 2 Tbsp soy sauce, 1/2 Tbsp sesame oil, and 1 Tbsp crushed toasted sesame seeds. Mix well. If your stomach ailment is severe or you are in recovery, it’s recommended to omit the soy sauce to minimize irritation, using only sesame oil and seeds, or having it completely plain.
