A delightful side dish with an irresistible chewy texture.
Main Ingredients- Small squid (Kkolsatgat) 1 bowl (approx. 200g)
- Thinly sliced garlic 5-6 cloves
- Green chili pepper 1/2
- Red chili pepper 1/2
Cooking Instructions
Step 1
First, wash the small squid thoroughly and pat them dry. (Using semi-dried small squid will result in a chewier texture.) Lightly heat a pan, add cooking oil, and then add the sliced garlic and small squid. Stir-fry over medium heat until fragrant and lightly browned.
Step 2
As the small squid cooks, it will absorb the garlic aroma, creating a delicious scent. Be mindful of the heat to prevent the squid from burning during this step.
Step 3
Let’s prepare the seasoning sauce for this flavorful stir-fry. In a bowl, combine 1 Tbsp soy sauce, 1 Tbsp ginger juice (if using fresh ginger, juice it or mince it very finely), 1 Tbsp Tsuyu, and 2 Tbsp oligosaccharide. Mix well until the sauce is evenly combined.
Step 4
Pour the prepared seasoning sauce into the pan with the stir-fried squid and garlic. Mix well and stir-fry, allowing the sauce to coat the squid evenly. Once the sauce begins to thicken, add the diagonally sliced green and red chili peppers and stir-fry briefly until the colors are vibrant. Avoid overcooking the peppers to maintain their crisp texture.
Step 5
If you prefer a sweeter taste, you can add 1 Tbsp of honey at this stage. Just before turning off the heat, drizzle in a little sesame oil for a nutty aroma. Finish with a sprinkle of toasted sesame seeds, if desired.
