Yang Hee-kyung’s Soul Food: A Simple and Delicious Egg Tteokbokki Recipe
Introducing Egg Tteokbokki, a soul food from Yang Hee-kyung that was featured on the show ‘Red-Cheeked You’. This is a simple and delightful egg dish, perfect for a quick breakfast or a satisfying snack for children.
Ingredients- 300g Tteokbokki rice cakes (soft)
- 3 fresh eggs
- 1 medium onion
- 1 Tbsp extra virgin olive oil
- 1 Tbsp butter
- 1 tsp salt
- A pinch of black pepper (to taste)
- A sprinkle of dried parsley flakes (for garnish)
Cooking Instructions
Step 1
If your tteokbokki rice cakes are hard, soak them in warm water for about 5-10 minutes until they soften. This step ensures the rice cakes become wonderfully chewy and tender when cooked.
Step 2
While the rice cakes are soaking, thinly slice the onion. Slicing the onion will add a lovely sweetness and a soft texture to your egg tteokbokki.
Step 3
Drain the softened rice cakes thoroughly. Then, drizzle them with 1 tablespoon of olive oil and toss to coat evenly. This oil-coating prevents the rice cakes from sticking together during cooking and gives them a nice sheen.
Step 4
In a bowl, crack the 3 fresh eggs. Add 1 teaspoon of salt and whisk them well until smooth. Whisking the eggs thoroughly helps them integrate beautifully with the rice cakes for a creamy texture.
Step 5
Heat a pan over medium heat, add a little olive oil, and then add 1 tablespoon of butter. Once the butter is melted, add the sliced onions and sauté until they become translucent and fragrant, releasing their natural sweetness. Sautéing the onions well is key to enhancing their flavor.
Step 6
Once the onions are nicely sautéed, add the olive oil-coated tteokbokki rice cakes to the pan. Season with salt and pepper to your preference, and stir everything together.
Step 7
Continue to stir-fry the rice cakes, making sure they don’t stick to the pan. Cook until the rice cakes are tender and all the ingredients are well combined. This step ensures the perfect chewy texture of the rice cakes.
Step 8
When the rice cakes and onions are well sautéed, reduce the heat to low. Pour the whisked egg mixture evenly over the ingredients in the pan. As the eggs begin to set, gently stir and scramble them into the rice cakes and onions, similar to making scrambled eggs. This will create a soft, coating layer.
Step 9
Once the eggs are cooked and everything is well combined, your delicious Egg Tteokbokki is ready! It’s a fantastic option for a simple breakfast or a nutritious snack for kids.
Step 10
Serve the finished Egg Tteokbokki generously on a plate. Sprinkle with dried parsley flakes for a touch of color and freshness. Enjoy your meal!
