This recipe is inspired by Chef Baek Jong-won’s sweet and sour pork ramen from the popular variety show ‘Kang’s Kitchen’. We’ll show you how to easily create a delightful fusion stir-fried noodle dish using your leftover sweet and sour pork (or guo bao rou). Main Ingredients

  • Leftover Sweet and Sour Pork or Guo Bao Rou (174g)
  • Shin Ramyun (1 pack, or your favorite instant noodles)
  • Water (600ml)

Cooking Instructions

First, crack one egg into a bowl. Lightly whisk it with chopsticks – you don’t need to fully beat it, just break up the yolk and white slightly.

If you don’t have scallions, you can use the white part of a leek. Chop the white part of the leek finely. If using scallions, wash them and cut them into 3-4cm lengths.

Cut your leftover sweet and sour pork or guo bao rou into bite-sized pieces. If the crispy coating is too thick or the pieces are large, use kitchen scissors to cut them into 2-3 smaller portions, making them easier to stir-fry with the noodles.

All your ingredients are now prepped! You’re ready to start making your delicious stir-fried noodles.

In a deep pan or wok, add a generous amount of cooking oil. Add the chopped scallions (or leek) and stir-fry over medium-low heat until fragrant. Be careful not to burn them. Once you can smell a nice aroma, proceed to the next step.

Once the scallion oil is fragrant, add the minced garlic, red pepper flakes (gochugaru), and soy sauce to the pan. Stir-fry for about 1 minute, keeping the heat moderate to prevent the seasonings from burning. This will infuse the oil with flavor.

Pour in 600ml of water and add both the soup base and dried vegetable packet from the Shin Ramyun. Stir well to dissolve the powder.

Bring the broth to a rolling boil. Carefully add the ramen noodles to the boiling liquid. Gently loosen the noodles with chopsticks or a fork as they cook to prevent them from sticking together.

Once the noodles are partially cooked and starting to loosen, add the cut sweet and sour pork or guo bao rou to the pot. The crispy coating will begin to soften as it absorbs some of the delicious broth.

When the noodles are fully cooked and the pork is heated through, gently pour the lightly beaten egg over the noodles. The egg will cook and add a wonderfully creamy texture to the dish.

Continue to simmer for a short while longer, adjusting the cooking time based on your preference for noodle texture and broth consistency. Once the egg is cooked and all the flavors have melded together, your fusion guo bao rou stir-fried noodles are ready! A pinch of pepper at the end will enhance the overall flavor.
