Introducing our special ‘Bird’s Nest Kimchi Pancake.’ We shape the batter like a nest, crack an egg right in the middle, and cook it to perfection. The combination of its crispy texture and the rich flavor of the egg makes it a truly unique and delightful dish. It’s simple to make with just kimchi, making it an ideal snack or a perfect accompaniment to makgeolli on a rainy afternoon.
Main Ingredients- Well-fermented Kimchi, 1 cup (approx. 200g)
- Water, 1/2 cup (approx. 100ml)
- Pancake Mix or All-Purpose Flour, 1 cup (approx. 100g)
- Egg, 1
- Cooking Oil, for frying
Cooking Instructions
Step 1
First, prepare your kimchi. Finely chop the kimchi using scissors or a knife into pieces about 1cm in size. This helps it mix well into the batter and improves the texture. If your kimchi is too sour, adding a tiny pinch of sugar (about 1/2 teaspoon) can enhance its savory flavor.
Step 2
In a bowl, combine the chopped kimchi with the pancake mix (or all-purpose flour) and water. Mix gently with chopsticks or a spatula to create the batter. Avoid overmixing, as this can make the pancake tough; just mix until the flour is incorporated. The batter consistency should be such that the kimchi is nicely coated, not too thin or too thick.
Step 3
Heat a generous amount of cooking oil in a frying pan over medium heat. Once the pan is hot, ladle about one portion of the batter into the center and spread it out into a round, flat shape using the back of a spoon. As the edges begin to cook, keep an eye on the heat to prevent burning. Aim to create a round shape, much like a bird’s nest.
Step 4
When the bottom side turns golden brown and the edges start to crisp up, carefully flip the pancake using a spatula or chopsticks. Let the other side cook until it’s also golden brown.
Step 5
Once both sides are nicely browned, gently press down the center of the pancake with a spoon or spatula to create a small well. Carefully crack one egg into this well. Try not to break the yolk to maintain the ‘bird’s nest’ appearance.
Step 6
Continue to cook for another 1-2 minutes over low heat, or until the egg white is set and the yolk is still runny (sunny-side up). Be careful not to burn the egg. You can gently break the yolk and mix it with the kimchi pancake for an even richer, creamier taste. Transfer the finished Bird’s Nest Kimchi Pancake to a plate and enjoy!
