Ingredients

  • 1/2 cup all-purpose flour (unbleached)
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 8 tablespoons unsalted butter (cold, cut into cubes)
  • 3/4 cup raw sugar
  • 1/4 cup cold milk

Cooking Instructions

Step 1

Preheat your oven to 180°C (350°F). Prepare a baking sheet by lining it with parchment paper. This step ensures your biscuits won’t stick and will bake evenly.

Step 2

In a large mixing bowl, measure and combine the all-purpose flour, whole wheat flour, and baking powder. Give them a quick whisk to mix. Add the cold, cubed unsalted butter. Using a pastry blender or your fingertips, cut the butter into the flour mixture until it resembles coarse breadcrumbs. Stir in the raw sugar and cold milk. Mix with a spatula or fork just until a dough begins to form; be careful not to overmix. Gently knead the dough on a lightly floured surface for a very short time until it just comes together and the surface is smooth. Overworking the dough can make the biscuits tough. For a quicker method, you can use a food processor for this step.

Step 3

Lightly flour your work surface and place the dough on it. Roll out the dough to an even thickness of about 1.5-2 cm (around 3/4 inch). Using a cookie cutter (traditionally about 6 cm in diameter) or a knife, cut the dough into your desired biscuit shapes. You can create rounds, squares, or any shape you prefer.

Step 4

Arrange the cut biscuits on the prepared baking sheet, leaving a little space between each one. Use the tines of a fork to gently prick the top of each biscuit a few times. This helps prevent them from puffing up too much and encourages a crispier texture. Bake in the preheated oven for approximately 20 minutes, or until the biscuits are a pale golden brown. Keep an eye on them, as oven temperatures can vary.

Step 5

Remove the biscuits from the oven and let them cool completely on the baking sheet. Once fully cooled, store them in an airtight container in a cool, dry place for up to a week.
