Today, I’m sharing a recipe for Kongnamul Muchim that’s incredibly delicious, even without spicy chili powder! It boasts a wonderfully crisp texture, making it a perfect side dish or a delightful accompaniment to meat dishes. It’s simple to make, so anyone can easily follow along.

Main Ingredients

  • 300g bean sprouts
  • A pinch of carrot (julienned)
  • 5 stalks green onion
  • 1/2 red chili pepper (for garnish)

Seasoning

  • 0.5 Tbsp tuna extract
  • 0.5 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • A pinch of roasted salt (adjust to taste)
  • A pinch of sesame seeds (for nutty flavor)

Cooking Instructions

Step 1

First, rinse the bean sprouts thoroughly under running water two to three times. If the root ends are dirty, you can trim them to help remove any potential ‘beany’ smell.

Cut the green onions into approximately 3cm lengths. Julienne the carrot thinly. For the red chili pepper, slice it thinly on an angle for a beautiful garnish.

Bring a pot of water to a boil and add half a tablespoon of salt. Once boiling, add the rinsed bean sprouts. As they float to the surface, stir them gently only two or three times. Be careful not to overcook them, as this will diminish their crispness. Immediately drain the blanched bean sprouts in a colander to remove excess water.

Transfer the drained, blanched bean sprouts to a large bowl. If you prefer an extra crunchy texture, you can quickly rinse them under cold water to cool them down. (If you rinse them, make sure to squeeze out any excess water again.)

Add the prepared green onions, carrots, and red chili pepper to the bowl with the bean sprouts. The vibrant colors will enhance the appeal of the dish.

Now it’s time to season! Add the tuna extract, minced garlic, sesame oil, sesame seeds, and roasted salt. Gently mix and toss the ingredients together with your hands until well combined. It’s important to taste and adjust the amount of roasted salt to your preference. Mix gently to avoid mushing the bean sprouts.

Once all the ingredients are nicely combined and seasoned, transfer the Kongnamul Muchim to a serving dish. Your delicious and crisp seasoned bean sprouts are ready! The refreshing crunch of the sprouts combined with the savory seasoning makes it an irresistible side dish.
