Soft and Delicious Braised Cod with Potatoes and Kimchi
Let’s make tender braised cod! We’re adding potatoes too. This dish offers a delightful blend of textures and flavors.
Main Ingredients- 2 Potatoes
- 2 Dried Pollock (Cod)
- 4 Cabbage Kimchi Stalks (preferably aged)
- 1/2 Green Onion
Cooking Instructions
Step 1
Wash the potatoes thoroughly and cut them into thick, approximately 2-3 cm slices. Place the sliced potatoes at the bottom of the pot. This helps prevent the cod from sticking and burning, and allows the potatoes to absorb the delicious braising liquid. Cut the kimchi into bite-sized pieces (about 4-5 cm long) and place them on top of the potatoes.
Step 2
Rinse the dried pollock (cod) clean and trim off any fins. Sprinkle 1 tablespoon of mirin and 1 tablespoon of soy sauce for soup over the cod. Let it marinate briefly; this step helps to remove any fishy odors and allows the seasonings to penetrate better. Think of this as pre-seasoning the fish.
Step 3
Pour 1 ladle of kimchi broth into the pot and add 1/2 cup of water to create the braising liquid. Bring this liquid to a boil over high heat. Once boiling, arrange the pre-seasoned cod and the prepared potatoes and kimchi evenly in the pot.
Step 4
Reduce the heat to medium-low, cover the pot, and let it simmer. Braise until the cod and potatoes are tender. During cooking, occasionally spoon the braising liquid from the sides of the pot over the cod and potatoes. This ensures even flavor distribution and keeps the ingredients moist.
Step 5
When the liquid has reduced and the potatoes and cod are almost cooked through, add the diagonally sliced green onion and 1 tablespoon of minced garlic. Simmer for a few more minutes to allow the flavors to meld. Taste the sauce and adjust the seasoning with more soy sauce for soup if needed. (I found it flavorful enough without additional seasoning.)
Step 6
Once the sauce is nicely reduced and all ingredients are perfectly cooked, turn off the heat. Serve hot, ideally over a bowl of steamed rice, for a truly satisfying meal.
