First, gently shake off the excess filling from the Napa cabbage kimchi to remove too much stuffing. Trim the firm base of the cabbage. Thinly score the ends of the cabbage stems. Next, lay a piece of kimchi flat and begin to roll it tightly, starting from the stem side of the wider leaves. It’s important to roll gently so you don’t break the midribs of the leaves.

Take another sheet of kimchi, lay it flat, place the rolled kimchi from the previous step on top, and then roll them together again. Layering and re-rolling will create a more substantial and aesthetically pleasing thickness.

Depending on the size of your cabbage leaves, you’ll typically repeat this process 5 to 6 times to achieve a size that’s perfect for serving to guests. Adjust the number of leaves based on the size of your kimchi.
