These adorable egg-shaped rice balls are designed to delight children. They’re filled with savory anchovies for nutrition and are shaped to spark your child’s imagination!

Rice Ball Ingredients

  • 2 bowls of warm cooked rice
  • 1 sheet of sushi seaweed (gim)
  • 6 sprigs of sprouts

Spicy Anchovy Filling

  • 25g dried anchovies
  • 1 green chili pepper
  • 1/4 green onion stalk
  • 1 Tbsp olive oil

Cooking Instructions

Step 1

First, sift the dried anchovies through a fine sieve to remove any crumbs or debris. Heat a dry pan over low heat and toast the anchovies until fragrant, without adding any oil. This process removes any bitterness and enhances their nutty flavor.

Once the anchovies are lightly toasted, push them to one side of the pan. Add 1 tablespoon of olive oil to the empty side and sauté the finely chopped green chili pepper and thinly sliced green onion until fragrant. The sautéed vegetables will further enhance the flavor of the anchovies.

When the vegetables are tender, mix them well with the toasted anchovies. Add all the seasoning ingredients for the anchovy stir-fry (1 tsp gochujang, 1 tsp soy sauce, 1 tsp sugar, 1 tsp rice syrup, 1 tsp minced garlic). Stir-fry over low heat until the mixture is glossy and well combined, creating a delicious filling.

Prepare the warm cooked rice. Make a slight indentation in the center of the rice and generously spoon the spicy anchovy filling into it. Cover the filling with more rice and shape the entire portion into a smooth, oval, egg-like form. Be careful, as the rice may still be quite hot.

Cut the sushi seaweed sheet into 8 equal pieces. Wrap one piece of seaweed around the bottom of each shaped rice ball. If the seaweed isn’t sticking well, moisten the edge with a little water to secure it neatly, like giving the rice ball a cute little hat.

Now it’s time to give your rice balls some personality! Use the seaweed to create eyes and a mouth. You can use a pre-made seaweed punch for shapes, or if you don’t have one, carefully cut out the shapes with scissors. This allows you to create unique rice balls with your own flair.

Finally, gently insert the fresh sprouts into the top of each rice ball. The sprouts will look like cute hair, completing the adorable egg-shaped rice balls. Capture your child’s attention and appetite with these colorful and charming rice balls!
