Be careful not to overcook, as they can become mushy. Immediately rinse the blanched stems under cold water to stop the cooking process. Drain them thoroughly in a colander.

Stir-frying with perilla oil: Heat 3 Tbsp of perilla oil in a pan over medium heat. Add the drained sweet potato stems and stir-fry. Allow the nutty aroma of the perilla oil to infuse into the stems as they cook.

Adding aromatics: Once the sweet potato stems begin to soften slightly, add the chopped green onions and minced garlic. Continue to stir-fry, allowing the garlic aroma to develop and enhance the flavor.
