Ingredients- 1/2 onion, finely minced.
- 1/2 carrot, diced into 1cm cubes.
- 50g celery, chopped into 1cm pieces.
- 1/2 green onion (leek or scallion), thinly sliced.
- 3 medium potatoes, peeled and diced into 2cm cubes.
- 1 sausage (your favorite kind), sliced into rounds about 1.5cm thick.
- 2 tablespoons unsalted butter
- 1 pinch of salt (or to taste)
- 1 pinch of black pepper (or to taste)
- 400ml water
- 1 teaspoon chicken stock (powder or liquid)
Cooking Instructions
Step 1
First, prepare all the vegetables. Finely mince the onion; this will contribute to a smoother texture once the soup is blended.
Step 2
Dice the carrot into approximately 1cm cubes. Cutting it to a similar size as the potatoes will ensure they cook evenly.
Step 3
Chop the celery into about 1cm pieces. The celery will add a subtle, aromatic flavor to the soup.
Step 4
Thinly slice the green onion. This will be added later to impart a gentle aroma to the soup.
Step 5
Peel the potatoes and cut them into 2cm cubes. Avoid cutting them too small, as they might become mushy when cooked. A moderate size is best.
Step 6
Slice the sausage into rounds, about 1.5cm thick, into bite-sized pieces. These will add flavor to the soup later on.
Step 7
Now, let’s begin sautéing. Heat a pot over medium heat, melt the 2 tablespoons of butter, and then add the minced onion. Sauté until the onion becomes translucent. This process helps release the onion’s natural sweetness, enhancing the soup’s overall flavor.
Step 8
Once the onion is softened, add the diced carrots and potatoes, along with a pinch of salt and pepper. Sauté for about 2-3 minutes until the vegetables are lightly cooked. This sautéing step deepens the vegetable flavors.
Step 9
Pour in the 400ml of water and 1 teaspoon of chicken stock. Bring the mixture to a rolling boil over high heat. Chicken stock is key to adding a rich, savory depth to the soup.
Step 10
When the soup comes to a boil, reduce the heat to medium, cover the pot, and let it simmer for about 10 minutes. This allows the potatoes and carrots to become tender. Remember to stir occasionally to prevent sticking.
Step 11
Once the potatoes and carrots are tender, add the sliced green onion and celery. Lower the heat to low, cover, and simmer for another 10 minutes. This step allows the subtle aromas of the green onion and celery to infuse into the soup.
Step 12
Finally, use an immersion blender to purée the soup. For an authentic German style, it’s best to blend it only slightly, leaving some small chunks for a ‘lumpy’ or ‘chunky’ texture, rather than making it completely smooth. (If you don’t have an immersion blender, you can use a regular blender or mash the potatoes.)
Step 13
Add the sliced sausage and simmer for just another 2-3 minutes until the soup is ready! Serve hot for the best flavor.
