Main Ingredients

  • Beef 100g (or 1 sheet of fish cake)
  • Carrot 1/4 medium (approx. 30g)
  • Cheongyang chili peppers 10 (adjust to your spice preference)
  • 2 sheets of kimbap seaweed (gim)

Seasoning Sauce

  • Soy sauce 1 Tbsp
  • Cooking wine (mirin) 1/2 Tbsp
  • Oligosaccharide (or corn syrup) 1 Tbsp
  • Minced garlic 1/2 Tbsp
  • Oyster sauce 1/2 Tbsp

Cooking Instructions

Step 1

First, prepare the kimbap filling ingredients. Pat the beef dry with paper towels to remove any excess moisture, then mince it finely. If you’re using fish cake, chop it into small pieces. Finely julienne or mince the carrot. Finely mince the Cheongyang chili peppers, removing the seeds if you prefer less heat. You can adjust the number of chili peppers to suit your spice tolerance.

Step 2

Heat about 1/2 Tbsp of cooking oil in a pan over medium heat. Add the minced beef (or fish cake) and carrot, and stir-fry until the beef is no longer pink. Then, add the minced chili peppers and continue to stir-fry for another 1-2 minutes until fragrant. It’s important to cook the ingredients until they are well combined and aromatic.

Step 3

Transfer the stir-fried vegetables and beef (or fish cake) to a large bowl. Add 2 bowls of warm cooked rice (approx. 300g) to the bowl. Gently mix everything together using a spatula, being careful not to mash the rice grains. Ensure the ingredients are evenly distributed throughout the rice.

Step 4

Now, let’s make the delicious seasoning sauce. In a small bowl, combine 1 Tbsp soy sauce, 1/2 Tbsp cooking wine, 1 Tbsp oligosaccharide, 1/2 Tbsp minced garlic, and 1/2 Tbsp oyster sauce. Mix well. Pour this sauce over the rice and filling mixture. Using the spatula, gently toss and fold the mixture to ensure the sauce coats every grain of rice evenly, like a flavorful glaze.

Step 5

Place a sheet of kimbap seaweed shiny-side up on your working surface. Spread about two-thirds of the seasoned rice mixture thinly over the seaweed, starting from the bottom two-thirds of the sheet. Avoid making the rice layer too thick, as it will make rolling difficult – aim for a moderate thickness. Lightly dampen the top edge of the seaweed with water; this will help seal the roll and prevent it from coming undone. Now, starting from the bottom edge, roll the seaweed tightly. Use your hands to shape and firm up the roll as you go. Once rolled, slice the kimbap into bite-sized pieces to reveal your beautiful Jinju Kimbap!
