I bought a generous amount of peeled garlic cloves when they were on sale and decided to make this delicious side dish, Savory Garlic Soy Glazed Garlic. The pungent garlic combined with the savory soy sauce and sweet oligosaccharide creates a flavor that everyone, young and old, will love. It’s perfect as a side for rice or a lunchbox addition!

Main Ingredients

  • 500-600g peeled garlic cloves (pre-peeled)
  • 2 red chilies (for color and a hint of spice)

Seasoning Ingredients

  • 2 Tbsp olive oil (for sautéing the garlic)
  • 2-3 Tbsp soy sauce (adjust to your taste)
  • 2-3 Tbsp oligosaccharide or corn syrup (for shine and sweetness)
  • A pinch of sugar (if you want extra sweetness)
  • 1 Tbsp sesame oil (for nutty aroma)
  • A pinch of toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

First, thoroughly wash the peeled garlic cloves and drain them well in a colander. It’s crucial to remove as much surface moisture as possible because any remaining water can cause the oil to splatter dangerously when sautéing. Pat them dry with paper towels to ensure they are completely dry.

Wash the red chilies, remove the stems, and then thinly slice them into rings or finely mince them for garnish. They will add a beautiful color to the finished dish.

Prepare a wide and deep pan, such as a wok or a Korean-style stew pan. Add all the dried peeled garlic cloves to the pan. Drizzle the 2 tablespoons of olive oil over them.

Now, turn the heat to high. Sauté the garlic, stirring constantly to prevent burning, until the outer surface turns a nice golden brown. The sharp, pungent flavor of the garlic will mellow out, and its natural sweetness will start to emerge. Once the surface is lightly golden, proceed to the next step.

Once the garlic is golden brown, add 2-3 tablespoons of soy sauce, 2-3 tablespoons of oligosaccharide (or corn syrup), and a pinch of sugar (adjust to your preference). Pour in half a cup of water (about 100ml). Keep the heat on high initially and let it simmer until the sauce coats the garlic. Adjust the sweetness by varying the amount of oligosaccharide or sugar to your liking. *Remember to save the sesame oil and sesame seeds for the end to preserve their fresh aroma.

As the glaze begins to thicken and reduce, add the chopped red chilies and mix them in. Now, reduce the heat to medium-low and continue to simmer until the sauce is almost completely absorbed and coats the garlic beautifully. Avoid over-reducing, as it can make the dish soggy; aim for a glossy finish.

When the soy glaze has almost evaporated and the garlic is glossy, turn off the heat. Finally, drizzle in 1 tablespoon of sesame oil and a pinch of toasted sesame seeds, then stir well. Your delicious Savory Garlic Soy Glazed Garlic is ready! It’s incredibly tasty served over warm rice.
