Seeing those plump shrimp reminded me of a grilled shrimp dish I used to make, so I decided to whip it up again. I used to finish it with a touch of oyster sauce, but today I experimented with a steak sauce I had on hand, and it turned out delicious! The shrimp’s natural firm texture paired wonderfully with the rich flavor of the steak sauce, creating a delightful combination.

  • 1 Tbsp steak sauce
  • 1 Tbsp oligo syrup (or honey/corn syrup)
  • Pinch of parsley flakes (for garnish)

  • Pinch of salt (to taste)
  • Pinch of black pepper (to taste)

Cooking Instructions

Prepare the shrimp by removing the legs, long whiskers, and the small ‘water sac’ near the head with tweezers. This ensures a cleaner presentation and eating experience.

Make a shallow cut along the back of each shrimp. Then, using a toothpick inserted into the cut, gently pull out the dark intestinal vein. Removing the vein results in a cleaner flavor and tender texture.

Slightly score the joint where the head meets the body. Then, carefully cut along the body of the shrimp lengthwise, about halfway through.

Continue this lengthwise cut all the way down to the tail. This allows the shrimp to spread open nicely when cooked, ensuring even cooking and attractive presentation.

Brush the prepared shrimp all over with 1 tablespoon of olive oil. Sprinkle lightly with salt and freshly ground black pepper to season. Adjust the amount of salt and pepper to your preference.

Heat a skillet over medium-high heat with a drop or two of olive oil. Place the seasoned shrimp in the pan, flesh-side down first. Cook until the shell turns pink and the head begins to take on a reddish hue.

Once the first side is nicely colored, carefully flip the shrimp over. Cook the other side until it also turns pink and the shell is lightly golden brown. Both sides should be beautifully cooked.

Add 1 tablespoon of steak sauce and 1 tablespoon of oligo syrup (or your preferred sweetener) to the pan. Stir quickly to coat the shrimp evenly, allowing the sauce to simmer and thicken slightly, creating a glaze.

Continue cooking until the sauce has reduced to a glossy, slightly sticky consistency that clings to the shrimp. Keep stirring to prevent sticking.
