Ingredients

  • 150g Squid Jeotgal (adjust to your preference)
  • Radish, appropriate amount (about 150-200g)
  • 1/2 Cheongyang chili pepper (adjust for spiciness)
  • 1 pinch of salt (for wilting the radish)
  • 0.5 Tbsp minced garlic
  • 3 Tbsp Gochugaru (Korean chili powder)
  • Sesame seeds, a sprinkle (for nutty aroma)

First, wash and peel the radish, then cut it into 4-5cm pieces. Finely chop the Cheongyang chili pepper. (Tip: Adjust the amount of radish and chili pepper according to the quantity of squid jeotgal you are using. If you have less jeotgal, use less radish!)

Place the cut radish in a bowl and add a tiny pinch of salt. This will help the radish soften slightly. Then, add 0.5 Tbsp of minced garlic and 3 Tbsp of gochugaru. Gently mix and toss the radish without mashing it. This step helps to infuse the radish with the initial flavors.

Now, it’s time to add the squid jeotgal to the seasoned radish. I’ve added all the squid jeotgal I had at home. Gently mix and combine the squid jeotgal with the radish, ensuring the seasonings are well distributed. Since the squid jeotgal is already seasoned, no additional salt is needed.
