This easy-to-make ‘Spoon Pizza’ using tteokguk rice cakes is a hit with both kids and adults. The chewy texture of the rice cakes, combined with flavorful toppings and melted cheese, creates an irresistible dish.

Ingredients

  • 2 cups tteokguk rice cakes
  • 1 onion
  • 1 handful dried shiitake mushrooms (soaked beforehand)
  • 7 lettuce leaves
  • A little butter
  • 1 cup store-bought tomato puree (or pasta sauce)
  • 6 string cheese sticks (or mozzarella cheese)

Cooking Instructions

Step 1

First, wash and finely dice the onion. Melt butter in a pan, then add the diced onion and sauté until translucent. Sautéing brings out the onion’s natural sweetness.

Finely chop the pre-soaked dried shiitake mushrooms to a similar size as the onion. Add the chopped mushrooms to the pan with the onions and sauté together to infuse their aroma. Add a pinch of salt to enhance the flavor. Wash and finely chop the lettuce leaves, then add them to the pan and stir-fry until wilted. Adding various vegetables makes it even tastier.

Now, pour 1 cup of store-bought tomato puree into the sautéed vegetables. If you don’t have tomato puree, store-bought pasta sauce works well too. Stir everything together with a spatula until the sauce is well combined with the vegetables (shake, shake!).

Place the tteokguk rice cakes in a sieve and rinse them briefly under running water to remove excess starch. After rinsing, place the rice cakes in a dry pan over low heat and stir-fry gently to evaporate any remaining moisture. This step helps the rice cakes absorb the sauce better and maintain their chewy texture.

Spoon the prepared tomato and vegetable sauce generously over the tteokguk rice cakes. Make sure to cover the rice cakes thoroughly with the sauce for a moist and flavorful result.

Finally, it’s time to add the cheese. Tear the 6 string cheese sticks into bite-sized pieces and spread them evenly over the sauce. If you have mozzarella cheese, it will make it even more delicious! Adjust the amount of cheese to your preference. Once the cheese is added, cover the pan with a lid and let it cook over low heat until the cheese is completely melted and gooey. It’s ready when the cheese stretches!
