Soft Crab Stick and Tofu Rolls

Melts in your mouth with a soft texture! Make your dining table richer with these hearty crab stick and tofu rolls, loved by both children and adults. It’s a simple yet elegant dish that anyone can easily make.
Ingredients- 2 sticks of imitation crab meat (kani kama)
- 1/2 block (approx. 150g) of soft or silken tofu
- 3 fresh eggs
- 1/5 of an onion (small size)
- 1 slice of cheddar cheese
Cooking Instructions
Step 1
Gently pat the tofu dry with paper towels, then finely mince it using a knife. Shred the imitation crab sticks (kani kama) by hand into pieces along the grain.
Step 2
In a bowl, crack the 3 fresh eggs and whisk them until smooth. Add the finely minced onion and mix well. The sweetness and aroma of the onion will blend beautifully with the eggs.
Step 3
Heat a non-stick pan over medium-low heat and add 1-2 tablespoons of grapeseed oil. Use a paper towel to spread the oil thinly and evenly across the pan to coat it. Pour the whisked egg mixture thinly and evenly into the pan, creating a layer similar to making a thin omelet (jidan).
Step 4
When the egg mixture is about 70-80% cooked, with the edges slightly set and the center still moist, start rolling from one edge of the pan. Gently push the cooked portion forward and pour a little more egg mixture into the empty space to spread it thinly and cook. At this point, while it’s cooking, spread the shredded crab sticks and minced tofu thinly over the egg layer. It’s important to spread the filling thinly so it doesn’t clump together.
Step 5
Once the egg layer is sufficiently cooked, use a spatula and chopsticks to cleanly fold it in half in one decisive motion. Be careful not to let the shape break apart as you fold it.
Step 6
If you find you don’t have enough egg mixture to form a proper roll, you can add 1-2 tablespoons of milk to the remaining egg mixture to increase its volume. Then, pour this onto the pan and spread it thinly to cook. This will help you create a larger roll.
Step 7
On top of the newly cooked egg layer, place one slice of cheddar cheese. The melting cheese will add flavor and help bind the ingredients together.
Step 8
On top of the cheese, spread another thin layer of the reserved minced tofu and shredded crab sticks. The layered ingredients will create a harmonious blend of flavors.
Step 9
Starting from the edge, carefully and firmly roll it into a log shape. Use chopsticks or a spatula to help shape it and ensure it’s rolled tightly so it doesn’t fall apart when sliced later. Let the finished tofu rolls cool slightly before cutting them into bite-sized pieces and enjoying.
