Introducing a special sandwich recipe featuring three delightful flavors: the warm and savory ‘Egg Sandwich’, the crisp and refreshing ‘Ham & Cucumber Sandwich’, and the moist and tender ‘Tuna Sandwich’! The Ham & Cucumber Sandwich is inspired by Nami Iijima’s recipe from the Japanese drama ‘Midnight Diner’, while the Tuna Sandwich is my own creation. With these sandwiches, you can choose your favorite or enjoy all three! They are perfect for a quick, satisfying meal, especially when paired with a cold glass of milk.

Savory Tuna Sandwich (Serves 2)

  • 4 slices of sandwich bread
  • 75g canned tuna (drained weight)
  • 1/4 onion (finely minced)
  • 1/4 cucumber (thinly sliced and lightly salted, then squeezed dry)
  • 2 Tbsp mayonnaise
  • Pinch of salt
  • Pinch of pepper
  • Butter (optional, for spreading on bread)

Refreshing Ham & Cucumber Sandwich (Serves 1)

  • 2 slices of sandwich bread
  • 1/4 cucumber (thinly sliced and pressed dry with paper towels)
  • 4 slices of deli ham
  • Mustard sauce, to taste
  • Butter (optional, for spreading on bread)

Tender Egg Sandwich (Serves 1)

  • 2 slices of sandwich bread
  • 2 large eggs
  • 1/2 Tbsp mayonnaise
  • Pinch of salt
  • Butter (optional, for spreading on bread)

Cooking Instructions

Step 1

Let’s start with the ‘Savory Tuna Sandwich’, a delightful appetizer for your taste buds.

Step 2

Thinly slice 1/4 cucumber. Place the sliced cucumber in lightly salted water and let it sit for about 5-10 minutes to soften. Once tender, squeeze out all the excess water firmly. This step prevents the sandwich from becoming soggy and keeps the cucumber crisp.

Finely mince 1/4 onion. If you prefer a milder onion flavor, you can soak the minced onion in cold water for a few minutes and then squeeze it dry.

Drain the oil completely from the 75g of canned tuna. Removing the oil ensures a clean, non-fishy flavor in your sandwich.

In a bowl, combine the drained tuna, squeezed cucumber, and minced onion. Add 1.5 to 2 tablespoons of mayonnaise, a pinch of salt, and a pinch of pepper. Mix everything thoroughly until well combined. Taste and adjust the seasoning as needed.

Prepare 4 slices of sandwich bread. If desired, spread a thin layer of softened butter on one side of each slice. Buttering the bread adds moisture and enhances the flavor.
