With all the heavy rain in various places lately, I’m a bit worried… I truly hope everyone has a safe and enjoyable summer vacation, free from any trouble! Especially when it’s raining or you don’t feel like cooking much, Kimchi Fried Rice is a wonderfully simple and delicious choice! The savory Spam and tangy, sweet kimchi combine to create a rice dish that’s incredibly appetizing. Here’s an easy-to-follow recipe for Kimchi Fried Rice.

Ingredients

  • 2 cups fermented kimchi, chopped into bite-sized pieces
  • 1.5 bowls cooked rice (warm up cold rice in the microwave if needed)
  • 3 Tbsp kimchi brine
  • 1/2 small can Spam, diced
  • 1/2 large green onion, thinly sliced
  • 1 Tbsp butter
  • 2 Tbsp cooking oil
  • 1 Tbsp perilla oil (deulgireum)
  • 0.5 Tbsp sesame seeds
  • 0.3 Tbsp sugar (adjust based on the sourness of your kimchi)
  • A little shredded seaweed for garnish

Cooking Instructions

Step 1

First, dice the Spam into small cubes and thinly slice the green onion. Preparing your ingredients beforehand will significantly speed up your cooking process.

Use scissors to chop the kimchi into small, manageable pieces. Measure out the kimchi brine separately and set it aside. The kimchi brine will add a wonderful depth of flavor to your fried rice.

Now, let’s start making the fried rice. Heat a pan over medium-low heat, then add 1 tablespoon of butter and 2 tablespoons of cooking oil. The melting butter will add a lovely buttery aroma.

Once the pan is hot, add the thinly sliced green onions and sauté over medium-low heat until fragrant, creating fragrant green onion oil. This step is crucial for developing a delicious base flavor.

After the green onion oil is ready, add the diced Spam and stir-fry it together with the green onions. The rendered fat from the Spam will mingle beautifully with the kimchi.

Turn the heat up to high and vigorously stir-fry with a spatula, ensuring the rice, kimchi, and Spam are well combined and not clumping. At this stage, add 1 tablespoon of perilla oil for an extra layer of nutty flavor. The key is to stir-fry until the rice grains are separated and slightly toasted.
