Easy Homemade Beef Curry Rice Recipe
Made a delicious beef curry rice today, and it turned out wonderfully! The rich flavor of beef combined with fragrant spices makes this a comforting and satisfying meal.
Main Ingredients- 1 packet curry powder (approx. 100g)
- 700ml water (check packet instructions for exact amount)
- 2 medium potatoes (approx. 200g)
- 1 medium onion (approx. 150g)
- 200g beef (stew meat or for curry)
- 1/2 medium zucchini (approx. 100g)
- 1 bowl steamed rice
- 2 Tbsp cooking oil (approx. 30ml)
Cooking Instructions
Step 1
First, let’s prepare the vegetables. Take 2 medium potatoes, peel them, and dice them into approximately 1.5cm cubes. Try to keep the pieces consistent in size for even cooking. Avoid dicing them too small, as they might become mushy.

Next, dice 1 medium onion into similar-sized cubes as the potatoes. Onions are key to a sweet and flavorful curry, so don’t be shy with them!

Prepare half a medium zucchini by dicing it into roughly 1.5cm cubes, matching the size of the potatoes and onions. Zucchini adds a lovely texture and extra nutrients to the curry.

Now, let’s prepare the beef. Pat dry 200g of beef (suitable for curry or stew) with paper towels to remove excess moisture. Heat 2 tablespoons of cooking oil in a pot over medium heat. Add the beef and stir-fry until it’s no longer pink on the outside. This step helps to seal in the juices.

Once the beef is browned, add the prepared potatoes, onions, and zucchini to the pot. Stir-fry everything together for about 3-4 minutes, allowing the vegetables to get slightly coated in oil and release their natural sweetness.

After stir-frying the ingredients, pour in 700ml of water (always refer to your curry powder packet for the precise liquid amount). Bring the mixture to a boil over high heat, then reduce the heat to medium-low. Cover and simmer for about 10-15 minutes, or until the potatoes and vegetables are tender. Skim off any foam that rises to the surface for a cleaner taste.

Once the vegetables and beef are fully cooked, it’s time to add the curry powder. Reduce the heat to low and gradually sprinkle in 1 packet (approx. 100g) of curry powder. Stir continuously with a spatula or ladle to ensure it dissolves smoothly and doesn’t form lumps. Adding it bit by bit is crucial for a lump-free curry.
Step 8
With the curry powder fully dissolved, increase the heat back to medium-low. Continue to stir the curry as it thickens, cooking until it reaches your desired consistency. Once it’s nice and thick, turn off the heat. A little freshly ground black pepper can be a nice addition.
