Main Ingredients

  • 2 Squids (use fresh ones)
  • 2 handfuls of Daikon Radish (sliced thinly)
  • 1 handful of Green Onion (cut lengthwise)
  • 1/2 Onion (sliced thinly)
  • Dried Kelp (for broth)
  • 2 Korean Green Chilies (adjust to taste, halved)

Seasoning

  • 2 Tbsp Soy Sauce
  • Salt (to taste)
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 2 Tbsp Minced Garlic

Cooking Instructions

Step 1

First, prepare all the ingredients for the Squid and Radish Soup. For the squid, remove the innards, wash thoroughly, and then slice thinly (about 0.5 cm thick) for better flavor absorption. Slice the daikon radish into thin, bite-sized pieces (about 2-3 cm). Cut the green onion lengthwise into diagonal pieces, and thinly slice the onion. If you like it spicy, halve the Korean green chilies after removing the seeds.

Pour 8 cups (approx. 1.6L) of water into a pot. Add the sliced daikon radish and dried kelp, and bring it to a boil. You can adjust the amount of water depending on how concentrated you want the soup to be. For a cleaner broth, you can remove the kelp once the water starts boiling.

Once the water is boiling vigorously, add the thinly sliced onion, lengthwise cut green onion, halved Korean green chilies, and minced garlic. Let it simmer for about 5-7 minutes, or until the radish becomes translucent and tender. This step helps to extract the radish’s refreshing flavor.

When the radish is sufficiently cooked, stir in 2 tablespoons of gochugaru and mix well. Then, add the sliced squid and cook. Be careful not to overcook the squid, as it can become tough. Cook on high heat for just about 2-3 minutes.

Finally, add 2 tablespoons of soy sauce. Taste the soup and adjust the seasoning with salt to your preference. This soup tastes even better when simmered for a longer period, allowing the flavors to meld. Continue to simmer for another 5 minutes so the squid cooks through and the flavors fully develop.
