Main Ingredients- 300g Pork Loin (cut for curry)
- 2 Onions (medium-sized)
- 1 Carrot (medium-sized)
- 1 Potato (medium-sized)
- 4 cups Water (approx. 800ml)

Cooking Instructions
Step 1
Wash and prepare all the vegetables (onions, carrots, potatoes) and pork. Dice the onions into large cubes or wedges. Peel the carrots and potatoes and cut them into bite-sized cubes, similar in size to the pork pieces, for even cooking.
Step 2
Heat 1-2 tablespoons of cooking oil in a pot over medium-high heat. Add the prepared pork, minced garlic, and black pepper. Sauté until the pork is lightly browned and the garlic is fragrant, being careful not to burn it. This step helps remove any porky smell and builds flavor.
Step 3
When about two-thirds of the pork is cooked, add the diced onions to the pot. Continue to sauté until the onions become translucent. This is the foundation for a delicious curry.
Step 4
Once the onions are sweet and translucent, add the cubed carrots and potatoes to the pot. Stir and cook for another 2-3 minutes. Lightly coating the vegetables in oil will enhance their flavor.
Step 5
Sauté all the ingredients together for about 5 more minutes. Then, pour in 4 cups (approx. 800ml) of water, enough to cover the ingredients. Bring to a boil over high heat, then reduce to medium heat once boiling.
Step 6
When the water starts to boil vigorously, gradually add the curry powder packet to the pot, stirring constantly to prevent lumps. Using a whisk or spatula to mix thoroughly, ensuring it dissolves completely into the liquid, is crucial.
Step 7
After all the curry powder is dissolved, continue to stir occasionally to prevent the ingredients from sticking to the bottom of the pot. Simmer for 5-10 minutes, or until the curry reaches your desired thickness. Be careful not to overcook, as it can become too salty. Adjust the consistency as needed.
Step 8
Serve the hot pork curry generously over freshly cooked rice. For an extra treat, you can add a fried egg or breaded pork cutlet (tonkatsu) on the side. Enjoy your delicious homemade curry!
