Main Ingredients

  • Scallions, chopped (for garnish)
  • Dried seaweed, rehydrated (soaked in cold water)
  • Ice cubes (plenty)

Chilled Udon Sauce

  • 1 packet instant udon soup base
  • 1 cup cold water (standard paper cup)
  • 1/2 Tbsp sugar
  • 1 Tbsp brewed soy sauce vinegar

Cooking Instructions

Step 1

First, prepare the garnishes. Soak the dried seaweed in cold water for about 15 minutes until it becomes soft and rehydrated. Finely chop the scallions for topping.

Step 1

Step 2

Bring a generous amount of water to a boil in a large pot. Once boiling, add the instant udon noodles and cook them briefly according to the package instructions. Be careful not to overcook, as they can become mushy. Immediately drain the cooked noodles and rinse them thoroughly under cold running water to remove excess starch. Then, submerge the noodles in ice-cold water for at least 5 minutes to chill them completely. This step is crucial for achieving a wonderfully chewy and firm texture for your udon.

Step 2

Step 3

Now, let’s make the chilled udon sauce. In a bowl, combine the instant udon soup base packet, 1 cup of cold water, 1/2 tablespoon of sugar, and 1 tablespoon of brewed soy sauce vinegar. Stir well until the sugar is completely dissolved. It’s recommended to use brewed soy sauce vinegar (yangjo sikcho) for its clean flavor, as other vinegars like apple cider vinegar can have a strong aroma that might alter the dish’s taste.

Step 3

Step 4

Pour the prepared chilled udon sauce into a deep noodle bowl. Add about 1 cup of ice cubes to make the broth extra cold. Carefully place the chilled udon noodles on top of the sauce. Finally, arrange the rehydrated seaweed and chopped scallions as garnishes for a beautiful presentation. Your delicious chilled udon is ready!

Step 4

Step 5

Voila! Your refreshing Baek Jong-won-style Chilled Udon Noodles are ready to be enjoyed, perfect for beating the summer heat. Doesn’t it look incredibly refreshing?

Step 5

Step 6

Take a bite and savor the sweet, sour, and deeply savory chilled broth combined with the perfectly chewy udon noodles – it’s an absolute delight! For an extra twist, try adding a handful of finely chopped kimchi on top. This transforms it into a delightful ‘Kimchi Chilled Udon’ with an added tangy kick! This summer, whip up Baek Jong-won’s Chilled Udon at home for a wonderfully cool and satisfying meal.
