  • Salt, 1 pinch
  • Black Pepper, 1 pinch
  • Red Pepper Flakes, 1 pinch
  • Fresh Chervil (herb), 1 handful

We’ve prepared approximately 1.5kg of fresh olive flounder, sliced thinly for carpaccio, sourced from the fish market. Using flounder intended for sashimi will ensure the best texture and flavor.
